Classic Waffles

Made these this morning. My husband and son loved them :) Followed the recipe exactly, just needed to add about 1/3 cup more warm milk because the mixture was a tad thick to my liking.

Cottage Cheese Chicken Enchiladas

My sister just called me and asked me for the recipe that I made for them three years ago...this was the recipe! My brother in law said he had never had such wonderful homemade chicken enchiladas, and he needed me to come over and make them again! Score :) Made them just as the directions indicated and apparently they were memorable ;)So now I will print out this recipe for my sister haha

Coconut Jerk Chicken

Turned out great. It's not a quick dinner to make, but very yummy. Definitely need to simmer a bit longer so everything has the chance to meld together! Husband LOVED it. Just back from Afghanistan, and couldn't get enough!

Salmon Cakes II

I had one large fresh filet of salmon left in the freezer, and this was the perfect meal to make with it! I followed the recipe to a T, except for a couple variations: I didn't use fresh breadcrumbs or parsley and I added about a teaspoon of garlic powder. That's it! My husband raved and raved about them...he ate all 4! To dip them in, I made horseradish sour cream, that another reviewer had suggested. Yum!

Spicy Hot Chicken Legs

Just at one of the legs and it sure it hot!!!! Super yummy...just like a giant chicken wing!! I followed the recipe exactly, but only used 6 legs...and I followed other suggestions and put them on a cookie sheet put some more hot sauce on top and baked at 400 for about 30 minutes. DELISH!

Lemon-Orange Orange Roughy

ABSOLUTELY WONDERFUL!! My husband made homemade lemon pepper and we followed the directions exactly (except we used at least a tablespoon of the lemon pepper). I can't say enough good things about this! Cooked it for about 7 min...until the sauce started to thicken a bit. My 21month old son even loved it, and he won't usually eat ANYTHING new! We served this with organic quinoa with no additional seasoning added. TRY THIS, YOU'LL LOVE IT!

Sloppy Joe Sandwiches

I, too, added the tsps of vinegar and chili powder. We all loved them. Served on buns with a slice of sharp cheddar cheese on top. Even my picky younger sister ate every bite :)

Pork Chop and Potato Casserole

This was great with the few minor changes I made. I used 4 potatoes and sliced them fairly thin- about what you would for scalloped potatoes. Then I used about a cup of chopped onion. I sliced up 3 boneless porkchops I had and then browned them in olive oil and garlic with lots of fresh ground pepper & garlic salt, took them out, and then threw the potatoes and onions in next, again adding pepper & salt. I put the potatoes & onions on the bottom of the casserole dish then the pork, then the soup mixture. Covered with foil, baked for 30 min, added more garlic salt, salt, pepper & a bit of cayenne pepper, and the cheese, recovered and baked for 25 more min. Delish! My husband loved it :)

Peppered Elk Skillet

Thank you for this recipe! My husband brought home some elk steak and wanted me to cook him something delish with it. This recipe was it! He LOVED it. I followed it exactly and served it over some cilantro lime rice I made. He also wants me to cook it again sometime and use beef.

Not Red Spaghetti Sauce

Oven Baked BBQ Ribs

These turned out great! I used light brown sugar and only 2.5lbs of ribs so we had extra sauce. My husband said that I have to make the barbeque sauce for every cook-out now :)

Whole Grain Banana Muffins

These are the best muffins EVER! I make them at least once a week :) I use wheat bran instead of oat bran...it has less calories! Oh, I also couldn't find pastry flour, so I just use whole wheat flour for all of it. And I always use a different flavor of fat free yogurt instead of plain. Also I mix the pecans right into the mix, and bake for about 17 minutes. Perfection! These are so low in fat & calories and totally moist. I recommend them to everyone. Great recipe!

Fettuccine with Sweet Pepper-Cayenne Sauce

Ok, I love spicy food, and this was definitely spicy! I recommend adding some grilled chicken (after cooking it separately), and possibly just a tad less cayenne pepper. I was sweating!! Very good though.

Garlic Cheese Chicken Rollups

I made these for some out of town guests. I thought I had made too much, but no- they ate every last bit! My picky sister even loved them. A tip for pounding the chicken breasts: I used a gallon ziplock bag, put the breast in there and pounded away with a meat cleaver- using the smooth side, not the bumpy side. It worked great, and they were very thin.
