Vegetarian Cottage Cheese Patties

Awesome! These were so tasty, and I love that it's healthy, inexpensive and very easy. I did have difficulty with the consistency when trying to fry - they kept breaking apart. I ended up giving up halfway through and just opted to bake without frying the whole batch. Worked just fine. I baked alone for 6 or 8 minutes, then added the soup topping and baked another 20 or so. I did find the recipe quite salty, and may cut down on the dry onion soup mix, or use reduced-sodium cream of mushroom soup next time. I was out of thyme, and opted for caraway instead (yum). Added some worcestershire as others suggested. Thanks!

Fantastic Lemon Butter Fillet

Very tasty! I just pan sauteed instead of baked. Omitted lemon pepper seasoning; added some dill and chardonnay. Wonderful! Served with a simple herb salad and crusty bread.

Fresh Asparagus Soup

Delicious! I used tzatziki in place of yogurt, and it worked wonderfully. Topped soup with asparagus, mushroom and macadamia nuts sauteed in butter and chardonnay. I was thrilled with how tasty this soup was, how decadent it felt, and how very quickly it came together! Will certainly make again :)

Tropical Salad with Pineapple Vinaigrette

Very tasty! I made this for a tropical-themed dinner party for my fiance and future in-laws. Enjoyed by all - but I do wish the flavors were more pronounced. I think next time I'll add some more tropical fruit on top...

Yum! Very refreshing, and so nice to know it's pretty healthy too! I subbed pineapple juice for oj because it was what I had on had -- worked great. Will definitely whip this up again soon!

Supreme Strawberry Topping

Fantastic over ice cream! I sliced all the strawberries, nearly halved the sugar, added just a *tiny* bit of flour, and let the whole mix simmer for 20 or 30 minutes. The slow, low cooking eliminated any need to use the blender, and the let the flavors develop nicely. I'll never buy pre-made fruit topping again.

Mushroom Burgers

Great! I used olive oil instead of cooking spray, and used soy sauce and Worcestershire sauce in place of oyster sauce. Grilled on the BBQ, topped with grilled onions, tomato, lettuce and Trader Joe's Greek feta dressing. YUM!

Classic White Wine Spritzer

We love these, especially on warm summer nights. We use 7up instead of club soda, and have also tried this with red wine and rose wine. Big fans!

Delicious! I subbed almonds for pine nuts, a bit less oil and cheese than called for. Otherwise followed pretty much as written. Did throw in a dash of nutmeg for kicks. Tasty, tasty, tasty!

Romantic Chicken with Artichokes and Mushrooms

Awesome combination of flavors! I didn't measure anything. Also -- dusted chicken in flour to help thicken the sauce, used a mix of white wine/chicken stock/lemon juice for the sauce. Added fresh Greek oregano, garlic, pepper. Served with rosemary garlic mashed potatoes, and a light tomato/cucumber/bell pepper salad. A keeper!

Scalloped Corn and Broccoli

Great base recipe! I followed other's advice and omitted all sugar. I added a can of chicken to make it more of a meal, added pepper, garlic and thyme. Topped with breadcrumbs. Tasty! Next time I'll use even more spices, and maybe a little lemon juice to brighten it up. Will make again, for sure.

Lentil Soup with Lemon

Delish! I didn't follow this totally as written -- used ginger, curry, cumin, coriander, salt/pepper, cinnamon, nutmeg to season -- no cilantro. Topped with sour cream blended with lemon juice/onion/garlic/coriander/cumin. Yum!!

Absolutely fantastic! I added extra garlic, was heavy on the herbs and pepper. Thought the red wine added a nice touch --- I wouldn't leave it out! I used whole wheat penne -- I like the nuttiness and density of the pasta, it holds up quite well in this soup.

Garbanzo Bean Chocolate Cake (Gluten Free!)

These were great! I only had ~1 c choc chips, so I added a fair amount of cocoa powder and a little extra sugar to make up for it. These are great -- very dense and moist. I made mini-cupcakes instead of a big cake - perfect for gatherings!

Vegan Split Pea Soup I

Tasty! I made this in the crockpot, so added additional water. Used chicken boullion, threw in some chardonnay, upped the garlic. Will make again and again! I love how filling this is whils also being truly healthy and nutritious. A great meal for the cooler months!
