Im an aspiring marine biologist from Vegas who loves to hike, entertain, train dogs, cook, bake and come up with fresh flavorful and budget friendly meals that are easy to put together.
My favorite things to cook
Theres something about a quick n easy chicken dinner that pairs up well with rice, vegetables or even a side of angel hair pasta that always puts a smile on my face, stomach and wallet. Still I love to splurge and take my time with dishes that need more TLC. I recently spent $50 on indian spices and have been making vindaloos, tandoori chicken, basmati and spicy vegetarian curries that fill my enrite condo with exotic aromas that have my poor pups hunger in agony ! I also enjoy firing up the grill and entertaining for a sunday feast of grilled marinated veggie kabobs, bbq salmon and chicken and a sides of baked potatoes and corn on the cob.
My favorite family cooking traditions
My fathers side of the family is from Italy and my great great grandmother passed on the best spaghetti sauce recipe from the 1920s, which she bottled and sold to help feed her kids during the great depression. My grandmother taught my dad when he was only 8yrs old, and he passed on the tradition to me when I couldn't even see over the table. The sauce is made from organic whole peeled tomatoes, water, garlic and lots of dried italian herbs that is simmered for 10hrs and left to marinade overnight. It is paired with ground sirlion meatballs that are browned well in organic olive oil and cooked in the simmering sauce. Tims Slap Yo Momma Hot Wings marinated with butter, red hot and beer and then simmered in the sauce, grilled and then tossed back in the reduced sauce served with my buttermilk bleu cheese dip and paired up with a newcastle and basketball game ! I also make THE best Tofu Sandwiches, which are cooked in a cast iron skillet, sprinkled with yeast, soy and white pepper on w

My cooking tragedies
Canned cobbler... For some reason the canned peaches are just HORRIBLE to bake with. I also don't have enough patience for fried potatoes and got a very bad second degree burn recently from frying tofu cubed for a curry.

Homemade Chicken Cacciatore, Sicilian-Style
Okay recipe, however I like using olive oil vs butter and red bell pepper and a tsp of crushed red pepper. I also prefer to crisp the chicken first by coating in flour and frying in a bit of olive oil until skin is crisp. It also seems to help thicken the sauce. This came out too runny and wasn't spicy enough. I think ill stick to my old recipe.

Cannoli
This is a good recipe, however I'm just not a fan of pure ricotta filling.. When I was a kid my grandma who was from Italy made cannoli for me on special occasions and she always used mascarpone cheese. I personally think it makes for a deeper, creamier cannoli filling, but maybe I'm just biast to grandma :)

Chicken Tinga Tostados
This was suuper good!!! My boyfriends old roommate is from mexico and made this all the time, but he lost her recipe and decided to make this instead. It is sooo good!! He used more Chipotle peppers in adobo (one large 14oz can) chicken stock instead of bouillion, a can of mexican stewed tomatoes with jalapenos, mexican squash and 6 tomatillos at my request for more veggies in it and cilantro. It is amazing with lettuce and fresh tomatoes added ontop. We also had the leftovers ontop of lettuce, black beans, corn, fresh tomatoes, tostada strips and a buttermilk ranch dressing as a salad and it was yummy!!
