Pumpkin Muffins with Streusel Topping

Outstanding! Moist and delicious! Followed instructions of previous reviewer and used entire can of pumpkin, and doubled the raisins. Great for a crowd...This recipe made 2 dozen full sized muffins.

Stir-Fried Sesame Asparagus

Outstanding!! The only change I made was an attempt to use just a little less oil for stir frying as I'm trying to concentrate on lowering calories in my cooking. I can't wait to share this with friends and extended family. Yummy!

Turkey Scallopini

Really delicious! I'm another who took Linda's advice and included a delicious lemony sauce. I used half butter, half olive oil to sautée the turkey. Served the scallopini over angel hair pasta with a side of roasted asparagus. Panko crumbs make the difference!

Salmon Fillets with Creamy Dill

This gets 4 stars for flavor. WOW!!! I tweaked this tasty recipe (and hopefully reduced fat and calories) by following the advice of other reviewers. I reduced the amount of sauce by 2/3. I squeezed the juice of 1/4 lemon over a 1 lb sockeye salmon filet; then mixed 1/4 cup mayo, 1/4 cup plain nonfat Greek yogurt, 1/8 cup dijon mustard with fresh lemon thyme, oregano, and basil. Also used fresh dill and added freshly grated pepper. Baked at 375 for 18-20 min. Spooned the fish and sauce over a bed of brown rice. Delicious! Will definitely make again!

Pepper-Honey Cedar Plank Salmon

Served to rave reviews from entire family! All agreed this was the best Salmon recipe ever tasted! I followed the recipe exactly except simmered the sauce for at least 40 minutes instead of the 15 suggested. It took that much time to reduce to a syrupy texture. Will make this again and again!

Strawberry Balsamic Chicken

Substituted plain Greek yogurt for strawberry yogurt, and very expensive strawberry balsamic vinegar for standard balsamic. Marinated chicken overnight. My husband insisted this was the worst meal I've prepared in years (30). We did enjoy a good laugh over dinner though...No left overs saved tonight!

Raspberry Pie III

I shelled out a fortune at our local farmers' market for enough raspberries to make this pie for my husband for Father's Day. It was worth every penny I paid! My only substitution to the original recipe was adding additional tapioca (4 tablespoons) as others have suggested. The result was perfect consistency! This will definitely be my go to recipe for berry pie in the future!
