Stuffed Green Peppers I
A good recipe but i added a few things and replaced the tomato soup with a 50/50 mixture of salsa and pasta sauce. I replaced the plain white rice with rice-a-roni mexican rice mix, added diced mexican style tomatoes,1 clove garlic chopped fine,a small can of mexicorn(drained). All of this went into the rice it'self and then was stuffed into the peppers and baked and right before peppers were due out of the oven I poured the remaining salsa pata sauce over the tips of cooked peppers and topped it of with some additional cheese(shredded cheddar) baked for 3 mins more and then enjoyed them.

Stuffed Guinea Squash (Eggplant)
This is a great dish!! and you can use cooked chopped ham or cooked crumbled sausage(bulk) into the mixture add some basil and you have a meal that has an Italian Flair, tasty and economical too!!
