Tuna Noodle Casserole II

This is very similar to the recipe my mother used, but with the addition of cheese. I was reluctant to try it but it makes it even better! I used two cans of cream of mushroom, a full can of 1% milk, two cans of tuna, and instead of chips I mixed in some french fried onions and sprinkled some ontop 5 minutes before it was done. I omitted the onion and added a can of peas and a can of sliced carrots.

Barlow's Blackened Catfish

This was delicious! I used less than 1/2 a teaspoon of seasoned salt and regular salt, and added some paprika and onion powder. I ran out of rub after coating the first piece of fish, so next time I will be sure to use more. Definitely have all windows open and a fan going because it creates a lot of smoke.

Bacon Cheddar Deviled Eggs

These are a very nice spin on the traditional deviled egg. I really enjoyed them. I couldn't eat more than a couple at a time because they were pretty rich. I plan to take these to family functions.

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

DELICIOUS, I will never use taco seasoning again. It really does not take much more time and it turns out much better. I have made this taco meat several times. I never use cornmeal because I don't have it handy.

Asian Orange Chicken

This recipe is pretty time consuming. I always take two days, marinating the chicken overnight. The results are well worth the time.

Doubletree Hotel's Cookies

I also used the revised recipe, and I will never try another chocolate chip cookie recipe again. They were not quite as chewy and tastey as the Double Tree's cookies but very close. The only things I will do differently next time is not blend the oats so finely to add more chewyness and maybe add more like 3/4 cup like the original recipe. Also I used pretty finely chopped walnuts because that is all I had available, I might just buy the whole ones and chop them myself next time. They might be good with a little coconut too. I chilled the dough overnight with plastic wrap coated in cooking spray right on top of the dough and another piece of plastic wrap over the top of the bowl. I chilled my cookie sheets for about 10 minutes while I let the dough sit on my counter in the sun to soften just enough to shape. I pressed them down just a little to flatten the top. Baked at 350 for 14 minutes until they were golden around the edges and soft and not quite fully cooked yet in the middle. I let them set on the cookie sheet and transferred them to wire rack to finish cooling. Gooey in the middle, fluffy, and delicious.

Mexican Pizza I

The mexican pizzas were a hit with my husband and four year old. I added an onion and garlic to the beef but otherwise followed the recipe. This will definitely be added to my frequented recipes!

Lime Chicken Soft Tacos

This turned out good, but I ended up just adding lettuce, tomato, and ranch and making wraps intead of tacos. I omited the oregano and sauteed the chicken in oil with seasoned salt, garlic powder, and cumin. 30 minutes for cubed chicken is way too long. It should be more like 15 total. The red wine vinegar gives it a flavor that was just not good for tacos in my opinion, but more lime juice may help. It would be good over rice though!

Hudson's Baked Tilapia with Dill Sauce

The fish was overly salty (maybe it was the brand of cajun seasoning I used?), but the sauce is AMAZING. I serve it with just about every type of fish I cook now.

Jenn's Out Of This World Spaghetti and Meatballs

I put my own spin on the sauce (decrease the sugar unless you like really really sweet sauce, I only use a shake). I followed the recipe for the meatballs pretty closely and they were fantastic. I will definitely make them again.

Hot Cross Buns

These took ALL day and did not turn out very well. They were dry and dense. Maybe I did something wrong, but I will not be trying them again. The orange icing was very tasty, though.

Eggless Ginger Cookies

These were okay until they cooled. Now they are hockey pucks. I'm going to give this recipe some credit by saying maybe I baked them too long (first time I've used a dark cookie sheet), but I will NOT be trying these again. They were also pretty easy to make, the consistency was right after sticking the dough in the refridgerator for 20 minutes.
