Seven-Layer Gelatin Salad

I've been making this recipe for the past 20 years; it's been around a long time!! It is quite labor intensive, but with some planning is definitely worth it. One trick is to make your flavored Jello as soon as you put the previous white layer into the frig to set. In fact sometimes I mix up each of the flavored Jellos and just leave them on the counter until ready to use. If the flavored Jello is slightly cooled before pouring, it will set more quickly. I allow each layer to set about 30 minutes. Pour each layer very carefully (I sometimes spoon it over)to avoid mixing with the previous layer. I can usually only use 1 1/2 cups white mixture for each layer to have enough for the last white layer. Use any colors/flavors of Jello you like, depending on the occasion. At Christmas we use red and green, for July 4th we use red and blue.

Strawberry Asparagus Salad

Unfortunately we thought this recipe was terrible. Even my husband, who usually eats anything and everything, didn't like it. It was bland and too sour, even with extra honey added. The combination might be ok with a sweeter dressing, but this didn't work at all. Sorry.

Stuffed Bell Peppers

These make a great meal. I added a 15 ounce can of diced tomatoes to stretch the recipe to 5 peppers and to add a bit of zing. Shredded cheddar cheese also works in place of the mozzarella. A very yummy dish!

Italian Veggie Rolls

If I could give this recipe 10 stars, I would. A couple hints: boil only 12 lasagna noodles so you won't have extras left over; make sure the broccoli and carrots are well cooked if you're fixing for kids; use more sauce than called for, especially if you're planning left overs. These are definitely company fare...tasty and satisfying!
