Pumpkin Roll I
Superb - hard to stop eating this one :) The cake is so moist it's incredible. I'm not as much as a sweet tooth as others, so I might find a way to cut down the icing, but it's still very very good.

Banana Banana Bread
I had some over ripe bananas and decided to try this recipe. I didn't have quite 2 1/3 cups of banana - probably about 2c (about four bananas) and I added dried cherries and almonds and a bit of vanilla. I actually do not own a loaf pan, so I improvised and made the recipe into muffins quite successfully. The bananas should be totally mashed, no lumps, and I reduced the baking time to 30 minutes at 350 degrees for twelve standard muffins. It's a quick way to make this great recipe.

Big Soft Ginger Cookies
These are absolutely the best ginger cookies I have ever made. I made a batch with double the recipe, and it didn't quite turn out - the cookies were good, but they were flat. I tried again and followed the recipe to the letter, and I got PERFECT cookies...perfect shape, size, color, everything. This is now a staple recipe for me!
