Best Cream Of Broccoli Soup

This is a good basic cream of broccoli soup. We did enjoy it. I stayed true to the recipe except for the celery which I omitted. Be aware that this makes a very thick soup. I needed to thin it out a bit with additional chicken stock for our taste. I will make it again I'm sure.

Chocolate Bar Fondue

I made this for New Year's Eve and it was fantastic! I made the entire thing in my slow cooker. Everything melted just fine and had a nice creamy consistency. I did omit the sugar as it was already sweet enough. We used pretzels, pound cake, oreos, strawberries and bananas for dipping. This recipe does make a huge amount so keep that in mind. We had a good bit left over but it does make a great ice cream topping.

Chocolate Pound Cake III

This recipe did make a good chocolate pound cake! I followed the recipe exactly except for the instant coffee granules. That is something I never have on hand so I used my instant espresso powder instead and it did give it a rich flavor. I did not use a Bundt pan, but instead used 2 loaf pans. The cake comes out pound-cake dense like it is supposed to.

Colleen's Slow Cooker Jambalaya

My husband really enjoyed this. I made this without the Cajun seasoning or the celery and it turned out just fine. I did add a few shakes of red pepper flakes for more heat. It was great served over rice. Will make again!

Downeast Maine Pumpkin Bread

I have lost count how many times I've made this over the years. I like to keep a loaf or two of this in my freezer all the time. My sons love this pumpkin bread! I do decrease the sugar to 2 3/4 cups and leave out the cloves altogether (never a fan of cloves in anything). I also bump up the amounts of all the other spices just to add more flavor.

Fudge

We liked it OK. I'm rating it for what it is and that is microwave quick fudge. It does not taste like my Grandmother's fudge but it tastes great for what it is. We used a mix of semisweet and dark chocolates. When you make this fudge (and you should), please add some salt. An 1/8 tsp of salt made all the difference in the world in flavor!!

Salisbury Steak

Made this last night by request of my 3rd grader. Of all things, he loves the cafeteria salisbury steak at his school (can you imagine!) This turned out well and he gave it 2 thumbs up. My only complaint was I felt it was a little too salty and next time will be leaving out any salt altogether.

American Lasagna

I have made this lasagna time after time over the years. Family asks me to make it on Christmas Eve and I've shared pans of it with other families. Honestly, the only change I've consistently made is that I add one large can of crushed tomatoes to the sauce. I never boil my lasagna noodles. Just place them in raw and assemble everything the night before serving. I find I need the extra juice from the tomatoes to make sure the lasagna does not dry out. Otherwise, it's great just the way it is!
