I'm a happily married mom of 2 amazing kids. My husband is fantastic, and supports me in everything that I do. I'm looking forward to attending college next year, and try to take life at every moment that is presented.
My favorite things to cook
I love to try everything. I have recently lost arond 60 lbs, and so it's always nice to find something easy, healthy and delicious (the coup de gras!). I enjoy baking, and love cooking food that makes people say "WOW!"
My favorite family cooking traditions
baking cookies together has to be number one on the list (cliche as it may be).
My cooking triumphs
I mastered making eggs over medium. I know it sounds silly, but this was something I learned completely on my own after many years of not understanding how to do it without breaking the yolks. :n)
My cooking tragedies
Because of my oven, I can't bake cookies at my house. The oven temperature is not correct based on what it should be, (heats only on the bottom, not on the top) and thus my cookies end up scorched BLACK on the bottom. I've learned that I need to cook everything on the bottom rack in order for it to turn out (until I get a new oven!!)

Homestyle Potato Chips
This was my first time trying homemade chips, as well as using my new fryer! I also used potatoes that had started to "eye", and I had them in water for only about 20 minutes before towel drying them and frying. I also did not soak them in salt water, just tap water. I don't have a special tool for slicing them, so I used a potato peeler to make the slices. For us, this was the perfect consistency and chip size. I fried each batch for six minutes, and it was perfectly golden/brown. I put them onto a plate with a towel, and then salted them immediately. My whole family devoured them! My six year old daughter said that they were the best chips she'd ever eaten. Really great!

Ham and Noodle Casserole
I usually try a recipe unmodified before rating it, but I couldn't do that with this one, because I know my families' taste in food. I made a ham the other day and had tons of leftover ham. I loved this, my husband said it was good, my kids are picky eaters and didn't really like it (but I was expecting that). I used creme of broccoli soup, a bit more sour cream, no onions, cubed sharp cheddar cheese, and cooked broccoli florets. I topped it with crushed Ritz crackers instead of bread crumbs. If I were rating this just on MY opinion, then I would have given it 5 stars. I did not find this to be dry at all, it was very cheesy. I won't make it again ONLY because of my family. I really loved it!

Creamy Chocolate Frosting
Super-duper good! I used ghirardelli baking cocoa, and I think it makes a difference. I also only used skim milk rather than evaporated, and it turned out GREAT. The BEST frosting I've ever tasted, and the first time I ever made my own frosting!
