I love this recipe just as much as my family! Even though I too made minor modifications from the original recipe, it still came out delicious! Instead of the tbsp of basil, I used dried minced garlic (I'm a garlic lover). I used 2 eggs in place of the butter. The cooling rack idea from another reviewer worked great. I have a cooling rack that fit perfectly inside one of my cookie sheets. The only reason why I used the cookie sheet was to avoid any crumbs falling to the bottom of the oven, on the floor or even the countertop. This idea most definitely helped to make the chicken crispy & not soggy. Cooking the chicken in the broiler for the last 5 minutes was an added bonus to really crispy chicken.
