California Grilled Veggie Sandwich
WOW. This sandwich was stupendous! I loved everything about it! The only things I would do differently would be to use only a little amount of feta if serving this to kids, and next time I think I will try grilling portabella mushrooms with it, I think that would make it a little more meaty since I am not a vegetarian. Also the recipe says to eat it as an open faced sandwich. Don't do that. Cut it in half from the side, and then cut it into fourths. So you will have 4 sandwiches. Get a little mayo and feta on each piece, and after all the grilling everyone can add their own veggies.
