Mediterranean Greek Salad

Excellent. Excellent. I loved it! This recipe is a super easy one and it tastes delicious. One change I will make...out with the black olives - their good, but I will definitely try a mix of Mediterranean/Greek olives - stronger flavor. I didn't have roma tomatoes on hand (and neither did the grocery store thanks to the tomato crisis), so I used grape tomatoes and halved them. I also added a tad of salt/pepper. I prepped the whole salad ahead of time- minus the oil, covered, and refrigerated. It was nice and crisp. I added the oil right before serving.

Spinach Stuffed Chicken Breasts

My kids - two of them HATE vegetables - (4yrs, 3yrs, and 17 mos.) LOVED it. I did follow a few of the recommended changes: 1. added garlic, onions, sun dried tomatoes and a few seasonings to the stuffing 2. brushed a mixture of lemon, olive oil and basil onto the chicken during the roasting 3. I roasted it for 20 min. covered, 30 min. uncovered and broiled it for the remaining 10 min. (5 min. each side or until the bacon is nice and crisp). I served it with a Mediterranean Greek Salad (recipe on allrecipes) and long grain brown rice (couscous would be a delicious side too). I am definitely going to add this to our regular routine. It gets a big thumbs up from everyone in my family and it takes a special recipe to earn that!

Bacon and Potato Soup

I thought it was too thin and a bit flavorless to begin. I added lots of spice (salt and pepper, thyme, basil, etc.) and also some heavy whipping cream to thicken it up a bit. I also used twice the amount of cheese the recipe calls for.

Chicken Fried Chicken

Very easy to make. It tasted great too. I added a bit more spice. I served it with baked sweet potatoes and steamed mixed veggies.

Orange Almond Biscotti I

Scented Applesauce-Cinnamon Ornaments

Great project to do with my two-year old for Christmas. Very messy for mommy, but lots of fun! It made my kitchen smell like cinnamon for days...many, many days. Once the ornaments dried, I used rough-grit sandpaper and sanded down the edges. The ornaments turned out great.

Orange Sauce Chicken

This is delicious. I recommend using chicken tenderloins instead of breasts - you taste more of the coating. The orange sauce is amazing. Make a double batch!

COLLEGE INN® Savory Turkey Pot Pie

I made a few changed. I used all fresh vegetables (including some green beans). I sauted the veggies for a few minutes to release the flavor and make them tender. I added rosemary, thyme, salt and pepper, fresh garlic, and parsley. Instead of turkey broth, I used chicken broth (it's what I had on hand). All in all, it turned out great. I will definitely make this again.

Apple Stuffed Chicken Breast

This was amazing. I made a variation as many of the other reviewers have done. I don't measure anything so I don't have exact amounts, but I added salt and pepper, cinnamon, oregano, thyme, sage, and garlic salt to the stuffing. I didn't have any wine on hand so instead I used 1/2 simply apple juice and 1/2 chicken broth. At the end, I added all the extra stuffing mix to the pan and cooked with the chicken for about 8 minutes. I removed the chicken and added brown sugar to the pan and cooked it with the leftover stuffing mix until it caramelized. I served that on top of the chicken. It was delicious! I can't wait to play with this recipe some more - it was very fun to make. Thanks to the reviews that I read as well!

Very easy. I definitely agree that you need to either cut the pasta in half or double the sauce. I will have to do some experimenting with various spices and I would like to try it with white wine/chicken broth. This was a fun dish to cook!

Peanut Choc-Scotch Fudge

Pretty tasty! The only problem I ran into was that the recommended pot size was not big enough! (I doubled the recipe) In the midst of a saucepan boil over, I switched everything to a stock pot - plenty of room for mixing in and it didn't boil over. OVerall, this was an easy recipe to follow.
