Roasted Garlic and Eggplant Soup

What a surprisingly good soup! The only changes I made were replacing the half and half with unsweetened almond milk, and adding 1 cup of roasted red/yellow peppers to the mix. Can't believe how good this was. I saved time by using a handheld blender. This recipe is definitely a keeper!

Sardines with Sun-Dried Tomato and Capers

Made the recipe as written and it was delicious. I enjoy sardines anyway, but I loved how the ingredients brightened up the flavor and took away much of the fishiness. I think this is something I could actually eat in the office without coworkers complaining. :) I spooned it onto crackers for an easy yummy lunch.

The Best Meatballs You'll Ever Have

These are TRULY the best meatballs ever. I bake them at 350 for 15-20 mins to make them a bit healthier and they are still soooooo goood. Thanks for a great recipe!

Three-Berry Lemon Trifle

Delicious, pretty, and light! I was looking for a healthy dessert to make for my roommate's birthday and this is a nice twist on a strawberry shortcake-type dessert. I was worried that the angel food cake would absorb too much of the filling and get soggy, but leftovers (made a double batch) stayed in the fridge for a week with no sogginess. Great recipe. Thanks!
