About this Cook
The best thing I did in my 20's was to date a chef. He introduced me to cooking with spices and made cooking more interesting.
My favorite things to cook
The more recipes I try, the more things I can add to my faves. I guess by this point, I have too many favorites to list.
My favorite family cooking traditions
My mother added walnuts to every single recipe. Sad to say, for those of you who might appreciate that, I did not carry that tradition forward. LOL
My cooking triumphs
I guess my triumphs would be when my picky eater husband rates a new recipe with high praise. Also, when a combination of flavors marries perfectly.
My cooking tragedies
My first lasagna. I didn't know to cover all the noodles with the sauce and it ended up burnt, brittle, it was a hot mess.

Salmon and Shrimp Cakes from Chef Bubba
Great seafood option! Shrimp and salmon are about the only two seafood items my husband will eat, so I was really happy to find this recipe. I did find it was lacking a bit of flavor after baking, so I sprinkled with salt and Old Bay. Next time, I will add 1 teaspoon of each to the recipe when mixing and will probably add a dollop of lemon juice as well. Used Panko instead of whole wheat bread crumbs and omitted the jalapeno because we don't care for it. I ended up with 9 medium size cakes, baked at 400 for 25 minutes. Perfection. Thanks so much for posting this recipe.

Simple Garlic Shrimp
With high heat, the shrimp overcooks, as mine did. Should've cooked over medium heat. The overcooked shrimp is the only reason I couldn't give 5 stars. Other than that, this recipe is absolutely fantastic and delicious. I used only 2 tbl lemon juice and substituted 1/4 cup diced roasted red peppers (from jar) for the red pepper flakes (personal preference). Those were my only changes. Do NOT skip the brine. It's a vital part of the overall flavor. Next time, I would skip directions #1 and 2, beginning with #3, adding the butter and shrimp to that line. I would also cook no higher than medium heat for the entire recipe. Served this over linguine. I only wish there were leftovers for today, but sadly we ate every last morsel. Thanks for posting the recipe! It's a keeper!

Garlic Cheese Grits with Shrimp
Best. Recipe. Ever. Period. To have my husband moan "this is delicious!" is a rare event. This recipe got that response. As others suggested, used chicken broth for grits. Also, used whipped cream cheese to replace processed, used 1 can Hunt's diced tomatoes with garlic, basil and oregano to replace tomato. Used garlic powder in grits and minced garlic in shrimp. This is just unbelievably good. Seriously. So good, that I hang my head in shame and admit, I went back for seconds. Like, an entire plate of seconds! LOL. Thanks for sharing aweaver!
