Spinach Stuffed Chicken Breast

This is a staple at my house. I love making it. I don't use pepperjack cheese, but I do shred the spinach and mix it with cream cheese for stuffing.

Winter Vegetable Hash

My husband fell in love with this. I thought it was good, but I wasn't a huge fan of the consistency, though it could've been the hash browns I used. It was nummy though!

Addictive Sweet Potato Burritos

I made these for a couple of people, two were vegetarians. The vegetarians LOVED them, but the eat lovers seemed to want something more. i thought they were delicious. I used the black beans instead also, and I added the spices in the pan.

Pumpkin Cookies I

I made these for Thanksgiving and *tried* to make a few extra for my husband.. my entire family cleaned me out! They are the perfect blend of sweetness and spice, and the butterscotch is an extra burst of sweetness. I'm a chocolate fiend, so I split the recipe about 25/75 and made a few cookies with chocolate chips instead of butterscotch.
