Lemon Curd

Golden Potato Soup

I used this recipe a little loosely (had some stuff in the fridge I wanted to use) and it turned out great. I used 2 lbs of new potatoes (skins on) and doubled the water and bouillon while skipping the parsley (didn't have dried parsley). I used real cheddar (old/sharp) and added a bunch of diced green onion at the end with the cheese. Delicious

Slow Cook Thai Chicken

I made this for a Thai themed potluck and it went over well. I prefer my Thai food a bit spicier, but this receipe was great for feeding a varierty of tastes.

Spinach Stuffed Chicken Breast

Basil Cream Sauce

This was tasty served over whole wheat pasta and diced chicken. I found it to be a bit bland. Next time I'll toast the pine nuts first as well as add an extra clove of garlic. I also think that cooking pancetta with the chicken would increase the oomph of this solid basic sauce.

Pork Chops with Italian Sausage

I used diced tomatoes rather than tomato sauce and doubled most of the spices. I served it over rotini with a healthy dose of fresh grated aprmesan on top. Both my fiancé and my parents loved it.

Pork Chops Over Rice

Made this dish last night with a couple minor changes (used chicken broth made from oxo and didn't measure anything exactly) and it was great. Will definitely do this recipe again.
