Cheese Lasagna

I'm a vegetarian and have had a lot of trouble finding a meatless lasagna recipe that I liked (the veggie ones aren't really that good, in my opinion). This one definitely won my heart, perfect in every way, and I was able to freeze the leftovers so I could use them as lunch for work. Awesome recipe!

Kellogg's® Chocolate Scotcheroos

In my family, these are known as "rice krispy treats," the one and only (none of that marshmallow stuff for us, thank you very much!). They're to die for, I'd probably eat a whole pan by myself if there was no one around to stop me. A couple of tips, though-melt the chocolate and butterscotch chips in a glass measuring cup in the microwave, in 1 minute intervals, stirring in between. Once you pour that over the top, let them chill in the fridge for an hour or so, then set them out at room temperature for about half an hour. That way the chocolate's set (although it gets a little soft at room temp), but they're easier to cut, as the rice krispy mixture gets softer. Also, as other reviews have said, don't push them down too hard into the pan, or they'll be too dense to cut and bite. They (without the chocolate) should come about halfway up the side of the pan.

Soft Giant Pretzels

I've made these so many times I can't even count them, and they come out wonderful every time. Next time I'll try the corn syrup instead of brown sugar, just to see if I like it better, but no improvements are necessary, in my opinion. The baking soda bath is a bit difficult, but still do-able with practice. I use a flat spatula to lift them out, and yes they're sticky at that point, but once you bake them, you realize how great that made them. I've tried all the stuff they do in the mall-plain (salted), cinnamon-sugar, cheese, etc...always delicious.

Cheesy Onion Focaccia

Awesome recipe! For the leftovers, I microwaved them with a damp paper towel (so they'd soak up the moisture), as I do when reheating any bread, and it worked like a charm, they weren't tough at all. Yummy, yummy.

Ham Broccoli Braid

I made this for my husband and I, I'm a vegetarian and he's not, so I made half with ham and half without (with extra cheese on my half). I used cheddar instead of swiss, and it came out a bit greasy, maybe Velveeta next time. I had extra dough, so I ended up re-rolling it, shorter and wider, and then it worked fine. I'll definitely be making this recipe again.

Tortilla Casserole

I made this with flour tortillas, and the consistency was almost perfect. I froze my leftovers (it was just me eating it, otherwise there wouldn't have been any leftovers), and found out the after being re-heated, they turned out pretty dry, so I'd suggest eating the leftovers (if you have any) pretty quickly, just refrigerating, not freezing, them. This is definitely a great all-around recipe, and open to adding almost anything you want (I'm a vegetarian, so I won't be trying the sausage as an add-in).

Green Bean Casserole II

A wonderful, classic, GBC recipe. I've only made it once so far, but after reading some of the reviews, next time I might try mixing cheese in, and adding more soup/beans. The onions definitely are a must-have. You won't have leftovers! :)

Nacho Cheese Bites

These tasted good, but the result wasn't worth the work. I've tried making them twice, the second time just to see if I could go on what I'd learned from the first, but they were only slightly better. It's very difficult to get the edges sealed well enough that the cheese doesn't leak out, and when it does, it burns and then they're not nearly as pretty as the picture. I brought them to a Superbowl party the first time I made them, and despite their weird (leaked) appearance, they did get gobbled up pretty quickly, once people realized that they tasted pretty good. I do like them, but doubt I'll be trying them again.

Simple Garlic and Basil Pesto

My all-time favorite pesto recipe! All the measurements were perfect as-is. I did have a hard time finding Brazil nuts, and ended up buying a can of mixed nuts, then picking out the Brazil nuts, both times I've made this. Since that's pretty expensive (and a hassle), next time I think I may omit the Brazil nuts entirely. I added about half the oil with the basil, as it was difficult to get it to blend, but that could just be my blender. Wonderful recipe though, a favorite of my family :)

Puppy Chow

I LOVE this recipe! Just the way it is, it's perfect. I've made it twice, the second time cutting everything in half (since I'm usually the one who eats it all!), and the ingredient amounts were fine. Definitely a must for the holidays.

These are an old family favorite of mine, but I didn't know the recipe, and this one matched almost perfectly. I use 4 cups butterscotch chips, no chocolate, as that's how my family always did it, but I'm sure they'd be just as good with chocolate, too. Great for the holidays.

Chicken Pot Pie IX

I'm a vegetarian, so I nixed the chicken and threw in a bit more of all the veggies, also adding broccoli (corn would also fit nicely). Instead of chicken broth, I used vegetable broth. All around, a great recipe, I've made it time and time again and love it every time.

Perfect Pita Chips

I made these just as the recipe said, and they were fantastic. Next time I think I may try what another review said, tossing everything in a large ziploc bag, as I think that would be easier, and I'll add some parmesan cheese as well.
