Mom's Green Bean Vegetable Casserole

This recipe is sooooo good. My recipe calls for 2 cans of french style green beans and one can of mexicorn instead of regular corn.

Maple-Garlic Marinated Pork Tenderloin

This was a good recipe. I definitely recommend adding salt to the marinade. I also roasted this pork loin in the oven, and I'm in Colorado at 6,000 feet above sea level, so cooking time for me was more like 1 hour and 15 minutes at 375 degrees. It turned out really good. I boiled the leftover marinade and used as a drizzle once the pork loin was done, as other people suggested. I ate two little inch-wide sections, and my husband ate the rest! He loved it. Will definitely make again, and will probably try this great marinade on chicken too.

Baked Chicken with Mushroom Gravy

So delicious. I made this twice - the second time I didn't coat with flour and it didn't make that much difference in the flavor. I sprinkled the chicken with garlic powder, and also put some garlic powder in the mushroom sauce. Also, I left out the cheese. Absolutely wonderful!

Shrimp Lemon Pepper Linguini

Great recipe. One suggestion: Have all of your ingredients prepared and ready to go before you start cooking - this cooks so fast, and it's hard to keep up if you don't have everything ready. I added parmesan cheese to this once it was finished. I think I may try putting chicken in it the next time I cook it.

Bacon Wrapped Chicken

My husband absolutely loved it. I think it turned out great, too, except that it was very rich and I couldn't eat very much. I substituted sour cream for mayo and cream of mushroom for cream of chicken. I don't think i would have liked this with mayo. I precooked the bacon, and also crumbled some fully cooked bacon in the center with the cream cheese. I used the chive flavored cream cheese. It turned out very nice looking - my husband and I both agreed that it would be good to cook when we have company over - looks great on the plate and a little goes a long way! There is a bit of prep time involved, but it's worth it. I served with fresh green beans.

Mendocino Chicken Salad

Great chicken salad! I just used canned chicken and light mayo, and it's still wonderful! The only other thing I changed was that I didn't put quite as much onion as what the recipe called for. This will be a regular in our house! Great to make up and keep in the fridge for a quick sandwich when you're sick of ham and turkey!

Baked Chicken on Rice

I don't know if I did something wrong or what, but I could not get the rice to cook evenly. The rice around the edges was soggy and the rice in the middle of the dish was really undercooked. I had to cook it probably 2 hours to get it to where it was even edible. I won't make this again.
