Thai-Style Peanut Sauce with Honey

We loved this! I served it over chicken and rice with a ring of broccoli. I used 1/2 cup extra crunchy peanut butter and omitted the peanut topping seen in some photos.

Quick Greek Pasta Salad with Steak

Delicious and nutritious! I had trouble finding the sun dried tomato pesto, but finally located it next to the jars of spaghetti sauce. The fresh basil was a wonderful accent flavor.

Marinated Grilled Shrimp

Fabulous! We used a grill basket rather than skewers; it held exactly 2 pounds. When it had cooked 3 minutes on one side, we simply flipped over the basket to perfectly cook the other side. This is the ONLY change I would suggest.

Chicken with Asparagus and Roasted Red Peppers

This was excellent - and so healthy. I made a few changes, so I could use up produce on hand, like fresh red peppers, Beefsteak tomatoes, and a few fresh mushrooms. We served it over rice and will be amking it again.

Asian Chicken Salad

My husband and I had to give this a 5. We made a few changes wqhich were suggested by others, we added a can of mandarin oranges, and a can of sliced Water Chestnuts. We used the La Choy Rice noodles off the grocery store shelf. We also doubled the dressing and let the cooked chicken marinate in it for a while. There were several different suggestions for the "greens' and we went with mixed greens - but the others would have worked wonderfully. It was FABULOUS! And we don't give this rating very often. If you do the dressing "right" you can't really fail with this.

Chocolate Melting Cake

Everyone LOVES this dessert! It's so easy to make and can be popped in the oven and served a few minutes later. We found the glass ramekins in Wal-mart for under $2.50 each.

We tried this in my commercial kitchen exactly as written. The four kitchen staff tasted it and rated it a 3 - too bland. We decided to add more pork rind, chunky rather than crushed and some scallion. Everyone rated the new version as a 4.
