Key Lime Pie VII

Wow, so simple and so delicious! I read lots of recipes and reviews before deciding on this one, and I'm glad I picked it! I wasn't sure it would set up enough without any egg yolks, and only baking for 8 minutes, but it really does. Slices beautifully, so it makes a nice presentation on the plate. I didn't have the entire tablespoon of lime zest, so I'm excited to try this again with all of it. I'm sure it will give it that extra lime zing to take it over the top.

Black Bean Hummus

I would give this recipe ten stars if I could!! It's amazing! I whipped it up as a last minute extra appetizer for Christmas day, and my guests inhaled it; even my 4-year old loved it. Served it with tortilla strip chips (didn't have any pita bread) and it was perfect. Added a bit more lemon juice because I like my hummus very lemony, and I drizzled a little olive oil into the food processor while it was mixing. This will be one of my regular appetizers from now on.

Honey Nut Granola

I was looking for a granola recipe so that I could stop spending $5 on little bags of granola from the grocery store. This recipe is the perfect solution! My huband loves it, and I make a double batch every other weekend to keep him stocked up. I add it my yogurt for breakfast most mornings. It's so yummy!! I make a few changes: add some unsweetened, very finely shredded organic coconut (from Whole Foods) shredded), add some organic puffed rice cereal, skip the pecans (not a big fan), add 1/4 cup of golden flax seeds, and add a little more honey. I also bake it a little longer than the recipe calls for, just watching for the right light golden color. This might be because I double the recipe and my cookie sheets are nearly overflowing. I can't say enough about this recipe. It's so versatile. You can make it entirely organic if you want, add ingredients, and play around with it for different tastes and textures. I'm so glad I found it!!

Layered Chicken and Black Bean Enchilada Casserole

Made this for company and it was delicious! To save some time, I substituted a fresh store-bought rotisserie chicken that I shredded for the chicken breasts. I probably won't do that again as the chicken was a bit too soft after heating it with the spices, chilis and beans. I also toasted the tortillas in the oven like some other reviewers suggested. Served this with a wonderful caesar salad and everyone went back for seconds! I'll definitely make this again. It's a great recipe for a casual dinner with friends.

Batman's Best Caesar Dressing

I lost my beloved caesar dressing recipes a couple of years ago and this was the closest one I've found since. I needed a quick caesar dressing recipe as my guests were scheduled to arrive in 30 minutes and I didn't have any store-bought in the house. This homemade dressing is so much better than any store-bought! After borrowing a fresh lemon from my neighbor, I whipped this up exactly as written. It was a huge hit, even with the kids! Like other reviewers, I tossed romaine lettuce with the dressing, some caesar croutons and freshly grated parmesan reggiano. I LOVE a really tangy caesar dressing, so I thought the amount of anchovy paste and garlic was perfect. A little goes a long way. It definitely thickens overnight in the fridge. Can't wait to use it again. Thanks so much for a great recipe!

Escarole and Bean Soup

This soup was super fast and delicious! My 2 and 5 year-olds couldn't get enough! Husband really liked it, too. Unfortunately, my 8 year old was turned off by the escarole. Like another reviewer, I also added some turkey sausage balls (Shady Brook Farms spicy Italian sausage links that I removed the casing from and pinched into little balls) that I cooked separately, and replaced the navy beans with the larger cannelini beans. The Adobo seasoning added the perfect spice. The only reason I didn't give it five stars is because it was a bit too salty, but that could be the combination of the Adobo, Italian sausage and regular chicken broth. Next time I'll use reduced sodium chicken broth. Served it with a fresh baguette for a light dinner. Really easy and good.

Easy Fruit Cobbler

I needed a quick dessert for an informal dinner with friends, and this was a real hit with the adults and kids! I doubled the recipe and followed the advice of other reviewers by using half white sugar and half light brown sugar, 1 teaspoon of vanilla in the batter, and I sprinkled the top with a little cinnamon and sparkling sugar. To save some calories I used skim milk, and because I doubled the recipes, I spread the fruit around the batter instead of dumping it in the middle. Instead of peaches, I used two jars of drained Morello cherries in light syrup that I always keep in the pantry from Trader Joe's. We served the cobbler warm with vanilla ice cream. The cobbler is better served warm. When it cools it gets a little dense, but I suspect there won't be much left over if you make this recipe!
