Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

I'm normally not a big fan of changing recipes too much but I made a couple changes in order to make it a bit more on the healthy side. I ended up grilling the fish versus frying it and used Mahi Mahi because I had it in the freezer. I also decided to use the honey lime cumin dressing on the slaw and toss that together since I really like the lime flavor. I did hold back on cumin because I'm not a big fan of too much of it. I also decided to use corn torillas and non-fat plain yogurt instead of the mayonnaise. It was pretty tasty, with a side of home made guacamole.

Pumpkin Cheesecake II

Wonderfully delicious cheesecake! I ended up making this instead of the standard pumpkin pie for Thanksgiving. This is only the 2nd time I have ever made cheesecake and it turned out perfect. I did make some changes by using a gingersnap crust like others from a different recipe on the site (I would recommend half the butter for that crust recipe than what it calls for, the butter oozed out of the pan because there is too much in the original recipe) I also used 1/4 teaspoon of both nutmeg and clove instead of mace and left out the lemon extract and doubled the vanilla. I wrapped the sides of the springform pan with foil and cooked it in a water bath and then turned off the oven at 50 mins and let it cool inside. It was perfectly even, no sinking, no cracks! When it was room temp, I let it set up in the fridge overnight. I recommend before putting in the crust that you cut out a circular liner for the bottom of the pan with parchment paper for easy removal later on (Do not use wax paper! it will melt) I also made a cinnamon whip cream to top it (1 cup heavy cream, 1 teaspoon vanilla and cinnamon, 1/4 powder sugar)

Pumpkin Cheesecake in a Gingersnap Crust

I actually only used the crust portion of this recipe for another pumpkin cheesecake.the crust was delicious, even without the nuts. One change I would make is to halve the butter,there was way too much and it oozed out of the bottom of the pan while cooking. If I hadn't had my pan wrapped in foil in a water bath, the butter would have been all over my oven!

Simple Cajun Seasoning

Pretty Good spice mix. I used it for a red beans and rice recipe also from this site. Based on some reviews, I reduced the salt content to 1 tablespoon since I would rather add salt to dishes rather than have things too salty. Had a good kick to it, which I liked.

Authentic Louisiana Red Beans and Rice

First time I have ever made red beans and rice and turned out pretty good. I did some tweaking based on other folks reviews. I used canned beans (no dried beans at the Trader Joe's and too lazy to go to another store), I used chicken andouille, chicken broth instead of water, used less oil and added some more garlic. I also took part of the beans and pureed them as others suggested to make it thicker. It definitely needed more cajun seasoning than the recipe called for. I used a tablespoon but may even use a tad more next time. In the end it did need something so I added some hot sauce and that seemed to do the trick! I think next time i may add more garlic too....

Triple Chocolate Whoopie Pies

These were very delicious and easy to make! As another reviewer mentions, this easily makes 20 whoopie pies. Mine did take longer to bake, more like 15 minutes versus the 10 minutes the recipe specifies. I put the batter in a large gallon ziploc bag and cut the corner to easily pipe out the tablespoon of batter. I also used a piping bag and tip to frost the inside. I think next time I will use another reviewers suggestion of adding instant espresso/coffee powder to the recipe.
