Cream Cheese Pound Cake I

I am getting ready to make a birthday cake for my mom, who is turning 65 in a couple of weeks. I needed a cake that had a great, simple, clean flavor and a nice, tight crumb for decorating. I decided to make this recipe exactly as written the first time around, and I wasn't disappointed. I couldn't even wait for the thing to cool off completely before nibbling at the crunchy brown top... sooo good. I know for my own personal tastes, this is money. But I will take some other bakers' recommendations and reduce the sugar to 2 1/2 cups next time. This recipe has endless possibilities for flavor combinations - I can't wait to play around with it! This is definitely the cake for my mom's birthday, and I was pleasantly surprised to find that it's a cake that will have its own place in my everyday recipe collection as well. Great recipe!

Waffles I

These were pretty good as far as taste goes - I didn't seem to have the same problem as others had with the bitter baking powder taste. I haven't quite found the perfect waffle recipe. I added orange marmalade and some semisweet chocolate chips to half the batter, and those were pretty tasty, but as a whole, the waffles were dry. :-\

Garden Fresh Tomato Soup

I didn't have any fresh tomatoes on hand so I used some canned Italian style tomatoes. I added a bit of milk to the roux as well. I really love this! Great tasting, simple and wonderful for a cold winter's evening!! No more condensed stuff for me!

Homemade Vanilla Pudding

I didn't have any trouble with lumps, as I made sure to add the cold milk to the dry ingredients and bring all up to temperature together. I thought it was very easy and quite tasty. I used a whole vanilla bean instead of the extract so I had these lovely little specks. :-). This is a great recipe for a quick pudding.

Homemade Vanilla Extract

I started my extract a couple of months ago in preparation for Christmas gifts for my baker friends and family (I'm also making vanilla infused sugar for them as well). I decided to experiment with one bottle of Smirnoff Orange as well. I used the orange extract just last night in a custard recipe - and it was delicious! I can't wait to finish sampling all the other extracts I've made for my friends/family (want to make sure they taste yummy before I hand them out)! At first, I was a bit hesitant to make my own extracts/sugars because I thought the vanilla beans themselves were so expensive... but my friend told me to check eBay - and I buy the beans now by the 1/2 pound. Surprisingly less expensive and so far, they are excellent quality. :-) It's especially great if you're making a lot as gifts and need a lot of beans!

Banana Sour Cream Bread

This is pretty tasty. I had enough batter to make a few muffins (not enough for a whole loaf). I topped the muffins with the crumb topping mentioned by another reviewer and then filled them with a peanut butter creme. Even my kids liked those. I think I might use just one more banana next time. Mine might have been on the small side, so it could have stood at least one more. Overall great recipe.

Buttery Corn Bread

I got sooo many compliments on this corn bread. My best friend said it was the best corn bread he had ever had - EVER! I made one modification and added a can of creamed corn so it was a bit more dense and moist, and it was absolutely delicious! We enjoyed it with hearty okra and tomatoes!

Mrs. Sigg's Snickerdoodles

Delicious! I read a recommendation on another review that suggested to mix the ingredients by hand. So I put away my KitchenAid and worked up a sweat creaming and stirring and blending. I used a 1/2 tablespoon cookie scoop and coated the little balls in the cinnamon sugar mixture using a Ziploc bag (4 at a time, using a 1qt bag). I baked each batch *exactly* 9 minutes, and they came out beautifully! I love that gorgeous cracked top and the wonderful soft texture. I stored the majority of the cookies in my cookie jar with a slice of bread to keep them soft, and on the second day, they were still melt-in-your-mouth!

Baked Corn Pudding

I wasn't a fan of this at all. I had the odd separation that others have described. This is just a personal preference, but the whole kernal corn just wasn't that great. It seemed to float to the top and then get really hard after baking. The center of the pudding was liquidy even after a full hour of baking time. There was a good flavor, but just not at all the texture or presentation I was looking for.

Sam's Famous Carrot Cake

This was my first attempt at homemade carrot cake. I always thought it was going to be a very complicated process, but this was so easy... Probably my oven but these cakes were done in about 40 minutes. The result was a moist and very flavorful cake that I will be making again and again!

These had a great flavor and looked really wonderful. I'm still honing my bread-baking skills, so they were a bit more dense than I expected, but all in all, a good recipe.
