This was a great base to start with but it definitely needed some adding to. Thanks to all of the awesome comments from everyone else I added the following: salt, thyme, garlic (powder/minced), black pepper, marsala wine, less sugar, and bay leaf... It definitely helped to cook the onions very slowly. I also used italian bread instead, sorry I know duh but I dig the italian loaves more! For the cheese I did swiss slices with a sprinkling of mozzarella... Provolone might have gone well with the swiss but I'm definitely a cheese lover... The only thing I didn't add but will next time is a little tobasco sauce like in the Panera Bread recipe.
