Sweet Potato Bread

Twice Baked Sweet Potatoes with Ricotta Cheese

I followed the recipe exactly, and these turned out great. They were a good balance of sweetness-- definitely not too sweet like regular peppers. My husband loved them. We will make again!

Blueberry Drop Cookies

These cookies tasted pretty good, and were a good way to use up blueberries. They were much lighter than regular cookies. They were not very sweet. I added cinnamon, which gave them a little extra flavor.

Pecan Chicken Breasts Stuffed with Cream Cheese and Broccoli

Wow! We absolutely LOVED this recipe. It was a little time consuming, but worth it. I cut slits in boneless, skinless chicken breasts and stuffed them rather than wrapping them. Next time we make this, I will probably toast the pecans to bring out the flavor a little more. The leftovers also tasted great the next day. We used fat free cream cheese and it was wonderful.

Nutty Stuffed Mushrooms

The mushrooms were very good, but slightly bland. Next time, we will probably add more spice. Overall, a fantastic recipe. We loved the pecans with the mushrooms, they were a great mix.

Key Lime Pie IX

This was a wonderful recipe. The first time I tried it, it didn't set very well at first. However, after being in the refrigerator all night, it held up well. The next time, I used only 1/3 cup of lime juice, and my husband said he liked it with more lime juice. Next time, we will up the lime juice and just let it set in the fridge for longer. The meringue recipe listed here did not work very well for me, so I used Meringue II from this site, which came out beautifully. Will definitely make this pie again using the meringue II recipe.

My husband and I love this incredibly easy, flavorful recipe. We usually add feta for some extra kick. This is a staple recipe for us now when we are looking for something easy to throw together.

Honey Roasted Red Potatoes

Great recipe. Next time I will double the sauce. Also used half sweet potatoes and half red potatoes, and I loved the two types of potatoes. My husband loved it, and we will make it again.

Oklahoma Cheese Grits

These were awesome! I followed the recipe, and my husband and I loved them. I tasted the grits too before adding the eggs to bake, and they tasted great then too. Next time I'm in a hurry, I may just serve the grits without the eggs to avoid baking-- either way, they taste fantastic.

Yin-Yang Salmon

I followed the recipe directions, but I was not a big fan of the marinade. I didn't like how the hot sauce (I used Crystal) and sweetness mixed. They really overpowered the fish. My husband thought it was okay, but I won't be making it again.
