Homemade Black Bean Veggie Burgers

These were very good! I actually thought that they were a bit dry, so next time, I may add a little bit of liquid of some sort. But they held together very well. Good recipe!

Crispy Turnip 'Fries'

These were really good. I sliced them very thin. They weren't exactly crispy, but they weren't soggy. I used smoked paprika instead of regular. We will definitely make them again when we get turnips in our CSA.

Goat Cheese and Arugula over Penne

We loved this! Next time, we would try with sun dried tomatoes instead, but overall, it was a fantastic flavor. The goat cheese and arugala work so well together.

Baingan Bharta (Eggplant Curry)

I felt like this had a bit of a strange consistency. The flavor was very good. I used Greek yogurt, but maybe a yogurt with a more liquidy consistency would have worked better. We served it over rice.

Chive Mushroom Soup

Yum! Great, simple, quick soup! Made it vegan with Earth Balance instead of butter, and soy milk instead of half and half, and veggie broth. Excellent!

Geneva's Ultimate Hungarian Mushroom Soup

Very filling, and delicious! Used olive oil instead of butter, veggie broth, and soy milk. I used smoked paprika because I didn't have the sweet. We loved it!

Butternut Squash Soup II

This had a great taste. I made it vegetarian by using veggie stock, and added pumpkin pie spice at the end. I used my immersion blender to make it pretty smooth. It is a very thick, filling soup. Thanks for the recipe!

Red Quinoa and Avocado Salad

This was a good base. As others said, there isn't really enough dressing, and I felt like it needed a little more kick. I mixed up an olive oil and balsamic dressing with a bit more cumin to pour over the spinach leaves and a bit more on the salad. I like the idea of using these flavors on the quinoa.

Brown Rice and Black Bean Casserole

This was really easy. I left out the chicken to make it vegetarian, and added a can of rotel tomatoes instead of the can of green chiles. When I tasted, I decided to add a bit of taco seasoning as well. It was very filling, and I used the leftovers to make enchiladas the next day. Easy recipe to adapt!

Tuscan Soup

This soup was delicious! The hubby raved about it. I followed the directions listed, except that I used the whole can of evaporated milk and added garlic. It was creamy, yet pretty light. It was easy to make and came together quickly. We will definitely be making this soup many times in the future.

This was really good. Like many reviewers, I added garlic, red wine, and beef broth, and only added about 1 cup of sour cream, which was definitely plenty. Tastes great and is filling!

Japanese Zucchini and Onions

This was a pretty good side dish. It definitely just tasted like the sauce-- the veggies were pretty covered up. It did remind me of what you get in a hibachi restaurant. I would probably reduce the sauce next time.

For what this is, it's pretty good. It is incredibly easy to throw together, and the topping is really good. It's a good recipe if you don't mind using the canned soups and you don't have a lot of time.

Smothered Mexican Lasagna

This was a wonderful, easy, quick recipe! The only change I made was to use Gimme Lean meat substitute instead of turkey. I used whole wheat flour tortillas, and I thought they soaked up the juices well without getting too soggy. I also added shredded pepper jack cheese to the top (to me, casseroles like this always need SOMETHING on top). This recipe is definitely a winner, and I'll be making it again!
