Crustless Spinach Quiche

Really tasty and soo healthy! I used leek instead of onion, regular cheddar cheese since that's all I had and added tomatoes and dill.

Chocolate Brittle Surprise

This was pretty good. I added sliced almonds and chopped pecans on top for some extra flavour. For some reason, it was more difficult to make than I thought it would be. I did have a couple issues in the kitchen though so I'm sure that didn't help. All in all this is a solid recipe and would make this again.

Spinach Cheese Ball

This was just ok for me. Personally I prefer the traditional style of spinach dip. But I do like that you can shape it into a Christmas tree! I would make this again, more for presentation than taste.

Spanish Rice Bake

Pretty good. My boyfriend liked it too. I used parsley instead of cilantro and added cheese into the rice mixture as well as on top. I did not add the brown sugar - thought it would make it too sweet.

Eclair Cake

This recipe is fabulous! What I call a great value recipe - super easy to make, few ingredients needed, inexpensive and great taste!!! I used 4 cups of milk instead of 3 by accident and it still turned out great. I also added some crushed walnuts to the top for some extra taste. Next time I would make my own frosting rather than buying the pre-made stuff. I used the low calorie/low-fat versions of most ingredients - coolwhip, jello and frosting.

Chocolate Trifle

This was excellent. Quite messy but well worth it. Next time I would probably make a point of using the low fat/sugar free versions of the main ingredients. I thought it was quite rich and could be taken down a notch by using "healthier" ingredients.
