Ginger Salmon

SO SO good! It didn't taste fishy at all - I messed up proportions a bit (1 teaspoon each of honey and mustard, used extra salmon) but still was amazing. It had to cook an extra 15 minutes or so since it was so thick. Fresh ginger is key! {EDIT: I've now made this with tilapia and just as satisfying. However, instead of just dumping the stuff on top, I brushed it this time. I liked it better before!}

Fresh Guacamole

Incredible guac! I didn't have a serrano chile, but it didn't matter. Perfect cream and crunch and flavor. I ate it all myself in one sitting ;)

Mushroom Spinach Omelet

An awesome combination of flavors! I ate the whole thing myself. I didn't have any green pepper or spinach, so I just used 1 c of mushrooms and 1/4 c onion. Next time I'll add the cheese right before folding it in half.

Cottage Cheese Chicken Enchiladas

The whole family loved this, which is not common around our house. Only changes: used green bell peppers instead of chiles, made homemade taco seasoning (from AllRecipes), and left out the salt. Be sure so spread a thin layer of enchilada sauce on the bottom of the pan before putting the food in. These were amazing... can't wait to eat the leftovers!

Spinach Chicken Parmesan

This was OUTSTANDING - it deserves five stars with changes: cut chicken into smallish pieces, used an extra 1/3 c parmesan, LOTS of extra homemade Italian seasoning (including extra crushed red pepper flakes), an extra 1/4 c white onions, left out pimento peppers. It was so juicy and delicious, but these changes must be made!

Turkey Bake with Whole Wheat Pasta

Five stars with these changes: I used cottage cheese in place of ricotta, 4 cloves of garlic, and added wilted spinach and crushed red pepper. SO GOOD! We couldn't stop eating it! Highly, highly recommended.

Easy Tomato-Basil Pizza

This was SO satisfying and delicious! I used 6 roma tomatoes and left off the peppers, olives, and mushrooms. Mistakenly I also left out the sauce but it was AWESOME that way! We tried adding some after but it was much better without it! This is the best pizza I've ever made!

Black Bean Pasta

Wow - even my pepper-hating brother loved this! I followed as written, except I used 1 T fresh oregano, powdered red pepper, and extra sauce (definitely needed). This really does taste incredible and it was SO EASY! We couldn't stop eating it.

Cinnamon and Lime Chicken Fajitas

Five stars with changes: I cut the chicken into small pieces, sprinkled with cinnamon, and baked with the potatoes (sprinkled generously with paprika) for about 12 minutes - it came out perfect. I also added diced red bell peppers, doubled the lime juice and added cilantro at the end. Served with flour tortillas and pretty tasty! Don't forget the salsa!

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Lots of cracking - when 3 out of 12 are cracked, that's too many!! I will also be sticking to the usual boiling method - bring the water up to a boil when the eggs are already in it!

Annie's Fruit Salsa and Cinnamon Chips

This was AWESOME - just as expected!! I subbed blueberries for raspberries, left out the additional sugar, used grape jelly for preserves, and utilized an onion chopper to make the fruit all more scoopable. For the chips, I sprayed the tortillas, cut with kitchen scissors, and sprinkled one side with cinnamon sugar. I pressed the pieces into mini muffin tins and they came out just right for scooping! The flavor combo is outstanding!

Polynesian Pork Chops

Slightly altered due to the amount made - I used 6 chops, 2 cans of soup, one 20 oz can of pineapple, and doubled the rest of the ingredients. I also added 1/3 cup brown sugar. I might try it again with proper proportions - there was waaaay too much liquid. It was okay.

Slow Cooker Sweet and Tangy Chicken

This turned out SO WELL! Changes: I used about 25 oz bbq sauce, a can of crushed pineapple, extra (frozen) green pepper, and 3 cloves garlic. The chicken was almost completely thawed so I was able to cook it for 3 or 3.5 hours on high and it turned out perfectly. Serve it with some brown rice - it sops up the juice and tastes so good.

These tasted so good - with a few tweaks! I used ground turkey and added extra chopped green peppers, basil, red pepper (powder), and Worcestershire sauce. (I didn't have celery salt to add.) I had a really hard time browning these... they just wouldn't really stick together while in the pan so I got frustrated at that point. After baking they were just fine. Also, maybe it was because I had too much meat (20 oz), but these weren't very prickly! Next time I might add more rice if I use that much meat again. Definitely worth a shot!

Spinach Enchiladas

Five stars with some changes - I added extra white onions, used 3/4 c sour cream, and added black beans, red pepper, cumin, chili powder, and some extra enchilada sauce. With these tweaks, the enchiladas were amazing! I absolutely loved them and could keep eating them! Next time I might add some shredded chicken.

Baked Sweet Potato Sticks

I made a few changes so I'm not sure I should even be rating it! I used one sweet potato cut in small pieces, lots of garlic salt and chili powder (about 1 tsp each), and cooking spray. I shook all the ingredients together in a bag and then baked as directed. Tasted awesome - crispy outsides, soft insides! I can't wait to make it again!

Spicy Sweet Potato Chips

Not bad. I don't think I cut the potatoes evenly because they weren't totally done... either that or it simply isn't enough cooking time. Another recipe I read is to cook at 400 for 40 minutes... that might be worth trying. Also, use REAL maple syrup - I tried Cary's and it didn't work so well.

Ultimate Double Chocolate Cookies

YUM!!! I followed the recipe except for the following: used plain baking cocoa, used light butter, left out coffee, used 3 tsp vanilla extract. I let it sit for 45 minutes before shaping the dough. These are so, so good. I got 75 small cookies out of the recipe!

Teriyaki Pork Tenderloin

WOW. This thing is incredible! Even my non-pork loving family members liked it! I made as directed except doubling all the ingredients (except the meat) and marinating for nearly 24 hours. I added a little brown sugar on top but next time I might just add some more to the marinade. It cooked in 25 minutes and was a little pink in the middle. Give it a go!

Microwave Baked Apples

This could have been better, I think, without the nutmeg. I guess I just don't really have a taste for it so I'm not sure why I used it!! I used an apple corer/spiraler to prepare the apple and it was way overdone in 3.5 minutes. Definitely suit this to your tastes - I'll use more cinnamon next time!
