I'm currently in grad school and trying to help my family eat better! I love researching recipes online and adding to my collection.
My favorite things to cook
Give me eggs any time of day! I also cook a lot of oatmeal, chicken, and desserts. Salads are also definitely a go-to in my diet.
My favorite family cooking traditions
We don't really have any traditions except for major holidays, which hopefully I'll change for the future. The one thing that I know I will have to continue to make for years is my mom's lasagna recipe, because I know I will never eat a dish like it anywhere else.
My cooking triumphs
After I moved back home after college (for grad school), I tried to get my family to change up their eating habits a little bit. I made a pork tenderloin recipe that I got from this website and EVERYONE liked it - including my picky 14-year-old brother and mom!!
My cooking tragedies
My grandparents have a no-fail banana bread recipe that I made sure to get a copy of. After making it a few times over the years, I thought I would change it up and make it healthier, with several significant substitutions. It came out very dry and, as my brother said, tasted like wood. I made sure to write on the recipe: "don't make this healthy!" :)

Ginger Salmon
SO SO good! It didn't taste fishy at all - I messed up proportions a bit (1 teaspoon each of honey and mustard, used extra salmon) but still was amazing. It had to cook an extra 15 minutes or so since it was so thick. Fresh ginger is key! {EDIT: I've now made this with tilapia and just as satisfying. However, instead of just dumping the stuff on top, I brushed it this time. I liked it better before!}

Fresh Guacamole
Incredible guac! I didn't have a serrano chile, but it didn't matter. Perfect cream and crunch and flavor. I ate it all myself in one sitting ;)

Cottage Cheese Chicken Enchiladas
The whole family loved this, which is not common around our house. Only changes: used green bell peppers instead of chiles, made homemade taco seasoning (from AllRecipes), and left out the salt. Be sure so spread a thin layer of enchilada sauce on the bottom of the pan before putting the food in. These were amazing... can't wait to eat the leftovers!
