Sugar Coated Pecans

So easy to make and turned out great! We buy these at the Renaissance Faire every year and now I can make them at home! I'll be making these a lot! I put parchment paper down on the cookie sheet to make it easier to stir them (and no washing cookie sheets later).

Eggnog Pancakes

Overall, these are good. And you can alter the recipe to your tastes. After reading some reviews about the batter being thick, I decided to do 1/2 milk and 1/2 eggnog - and you could still totally taste the eggnog in the end. I added some nutmeg, too. They taste like regular pancakes w/ a bit of eggnog flavor. Good texture, too. If you like eggnog (I love it), then you'll probably like these.

Roasted Brussels Sprouts

I thought they were good, but my teenage boys and husband thought the boiling method we usually do is still better. Worth a try b/c they were good to me, but not really any better than boiling.

Sweetened Whipped Cream

Made this for strawberry shortcake. I added vanilla to it (just b/c I love vanilla) and it was fine. It's best the day you make it; not the same after that. Good, easy and fast.

Simple Whole Wheat Bread

I've been making the kids' sandwiches all week with this bread and they said it's great for PB & J but they'd rather a different bread for the meat/lettuce/mustard sandwiches. I think it's b/c this is a sweeter bread from the honey. It's a good toast w/ butter and jam bread, too :)

Amish White Bread

My husband and kids all loved this bread despite the fact that I don't think it rose properly. That was my fault though - I'm not good with yeast. But it tasted good and it was easy. They are all waiting for me to make it again!

Curried Coconut Chicken

Very good basic recipe. I use Quorn chikn (to make it vegetarian), add another TBS curry, and use less tomato sauce. This has become one of our regular dinners.

Easy Vegetable Pot Pie

This is a good recipe to use as a starting point b/c you can change it up any way you like. I used pre-made pie dough, threw in some fresh thyme and rosemary (instead of dried herbs) and used frozen veggies I like (broccoli, peas and corn). Next time I'll make more filling by doubling the potato soup and even more veggies. There were no leftovers!

Key Lime Pie VII

I love key lime pie and I love citrus flavors. This is the ONLY key lime pie recipe I use now. It's soooo easy to make and very fast. I add extra zest just because I love lime, and when I use the extra-large graham cracker crust pie shell ("2 extra servings!") I can use 3 cans of condensed milk (so no leftovers to rot in the fridge!). I just add an extra spoon of sour cream and up the lime juice to 1 Cup. I haven't been able to mess this recipe up yet, so if you're scared you might, try this recipe. It's totally foolproof and makes me totally feel like a cook :)

Heavenly Chocolate Mousse

This is THE only dessert my husband will eat! I make a double batch every week. I melt the chocolate in the microwave and just make sure it's 100% melted. It's awesome :)
