Chocolate Peanut Butter Squares

Super easy and tasty. I doubled the recipe and put it in a 9x13 pan, which was a mistake. It made way too much and the squares were too thick. It still tasted good, though.

Crab Dip

Easy and looks great. It was gobbled up. I added some Tony Caschere's creole seasoning because I didn't have Old Bay. You can taste it and add some seasoning before you bake it.

Banana Bran Muffins

These are awesome. I added 1/4 c. jumbo chocolate chips and used only 1/4 c. walnuts. The chocolate added some extra sweetness.

Black Pepper Beef and Cabbage Stir Fry

I've made this several times and we always enjoy it. The meat tends to stick to the skillet so you might want to use a non-stick variety if you have one.

Gingerbread Men

These are delicious when fresh baked. However I think after a few days in a tightly sealed container on the counter they tasted "cardboardy" and kind of stale. If you make them earlier than your serving date I'd suggest freezing them.

Black Beans and Rice

I loved this because it's so simple. You can add corn, green or red peppers, etc. You can use it as a burrito filling along with some cheese. One thing to note: it says 10 servings but that's if you're serving it as a side dish. As a main dish it serves only about two people.

Pesto Pasta with Chicken

I was going to make Fettuccini Tomato Rustica II, which is also on this site, but forgot to buy the cheeses. So I made this instead and was pleasantly surprised. Very good. Next time I may try the sundried tomatoes that are not packed in oil (to save on fat content).

Luscious Slush Punch

Everybody loves this punch, from kids to adults. It's a great way to sneak some fruit juice into your kids! Since it is a "night before" recipe, my only comment is don't wait until late at night to make it because you have to allow the mixture some time to cool before you put it in the freezer. I made this mistake by making it at midnight for a baby shower at noon the next day. I froze it in two ziplocks and by noon the next day it wasn't quite frozen. The next time I made it I froze it in small plastic containers in the coldest part of the freezer and it froze better.

Pizza On The Grill II

This was fun but as one reviewer said, have all your ingredients out and ready. You have to work quickly. My husband loved the smokey flavor of these pizzas. The kids prefer pizza cooked in the oven without the black grill marks, though.

Fettuccini Tomato Rustica II

Great recipe for those who love sun-dried tomatoes. I left out the olive oil but kept some of the oil from the tomatoes. I didn't use the whole package of pesto but you can freeze it for next time. This is restaurant quality!

Garlic Cheddar Chicken

Seems a bit caloric but worth the splurge! I used to make a similar garlic chicken recipe using Lipton garlic soup mix. I'm dropping that recipe and using this one instead! It's so much better. I served it with mashed potatoes, which worked great with the buttery, cheesy drippings.

Salsa Chicken

This was so easy and so delicious. I tried it because I had all the ingredients on hand, and was pleasantly surprised! I served it with yellow rice. I think the trick is to use a salsa that you really love.

Greek Pizza with Spinach, Feta and Olives

Great easy "garlic sauce" for a base. You can adjust this recipe to what you have on hand. I used Martha White's crispy pizza crust mix to make the crust. (My kids love this crust.) I also used fresh tomatoes, red onion, green olives, some capers, and frozen spinach that I cooked in the microwave first then drained well. I also added mozzarella cheese with the feta cheese. I added salt and pepper but it was a bit too salty so next time I won't add salt. Enjoy.
