Portobello Penne Pasta Casserole

I had a dinner party with a vegetarian attending so decided to try this. I didn't like it at all. Everyone said it was okay. Some red pepper flakes on top helped a bit. I should have made stuffed shells or cheese lasagna instead!

Beer Lime Grilled Chicken

The chicken was a bit dry. Maybe it works better with chicken pieces on the bone, and with a longer marinading time. Some olive oil in the marinade might help. I doubt I'd make this again.

Salsa Chicken

This was so easy and so delicious. I tried it because I had all the ingredients on hand, and was pleasantly surprised! I served it with yellow rice. I think the trick is to use a salsa that you really love.

Garlic Cheddar Chicken

Seems a bit caloric but worth the splurge! I used to make a similar garlic chicken recipe using Lipton garlic soup mix. I'm dropping that recipe and using this one instead! It's so much better. I served it with mashed potatoes, which worked great with the buttery, cheesy drippings.

Mouse's Macaroni and Cheese

A nice basic mac and cheese. Next time I will leave off the bread crumbs as they seemed to overpower it. It's a matter of taste, I guess.

Fettuccini Tomato Rustica II

Great recipe for those who love sun-dried tomatoes. I left out the olive oil but kept some of the oil from the tomatoes. I didn't use the whole package of pesto but you can freeze it for next time. This is restaurant quality!

Firecracker Grilled Alaska Salmon

This was delicious. I started to grill it skin-side down and some of the pieces burned. I just scraped it off and it was fine since it was just the skin. When I lowered the heat it grilled perfectly. I used a special grill grate cover for fish and vegetables. Next time I'll be sure to oil it better.

Pizza On The Grill II

This was fun but as one reviewer said, have all your ingredients out and ready. You have to work quickly. My husband loved the smokey flavor of these pizzas. The kids prefer pizza cooked in the oven without the black grill marks, though.

Pesto Pasta with Chicken

I was going to make Fettuccini Tomato Rustica II, which is also on this site, but forgot to buy the cheeses. So I made this instead and was pleasantly surprised. Very good. Next time I may try the sundried tomatoes that are not packed in oil (to save on fat content).

Black Beans and Rice

I loved this because it's so simple. You can add corn, green or red peppers, etc. You can use it as a burrito filling along with some cheese. One thing to note: it says 10 servings but that's if you're serving it as a side dish. As a main dish it serves only about two people.

Slow Cooker Beef Stroganoff I

This was the second time I've made this recipe. I wasn't "wowed" by it the first time and feel the same way now. It's just okay. It has a strong mushroom "canned soup" flavor. The cream cheese didn't totally liquify so there were little white specks in the sauce.

Beef Noodle Soup

I made this to use up some raw stew meat I had to cook. It was surprisingly good for something so easy to throw together. I just used regular egg noodles that I boiled separately, so it's probably even better with the frozen noodles the recipe calls for. I added some red pepper flakes when serving it.

Holiday Cranberry Sauce

I couldn't find a spice bag so I used cheesecloth, which kind of fell apart a bit. I had to cook it much longer than stated in the recipe. It had too much of a clove flavor for my taste.

Grandma Ople's Apple Pie

Very pretty pie. It looked fabulous! Rolling out the piecrust was the hardest thing for me. I planned to serve it the next day so I left it on the counter overnight, covered with a clean towel until it cooled, then covered with plastic wrap. I think I overcooked the pie because it was a bit like applesauce in spots inside. The taste was great, however.
