Tomato, Cucumber and Red Onion Salad with Mint

Reviewed: Apr. 28, 2013
Good..nothing great. I wouldn't make it again. I thought the flavor of the red wine vinegar was too strong.

Fiery Pepper Chicken

Reviewed: Apr. 23, 2013
Not bad, but not a recipe I would use again. I've had this in a couple of Chinese restaurants but they used some more flavoring (not sure what it was!) that was missing here.

Spicy Slow Cooker Black Bean Soup

Reviewed: Jun. 9, 2011
Great recipe. I am giving it 4 stars instead of 5 because of all the additions I made to make it flavorful. I added some fresh garlic, more chili powder and pepper sauce because we like it spicy, and some bottled salsa (which makes all the difference!). I followed the suggestion of pureeing half of the soup which made the consistency excellent. Serve with a little sour cream on top and it becomes even more delicious.

Lite Coconut Cake

Reviewed: Apr. 11, 2011
I followed the recipe and the frosting had an odd sour cream flavor to it. It wasn't unbearable but I definitely won't make it the same way again. I also added dry roasted coconut on top which added a whole layer of new flavor.

Mexican Bean Salad

Reviewed: May 26, 2009
amazing! a word of advice, the oil and vinegar should be cut in half and the rest of the dressing ingredients should be as stated. there is just too much dressing. this recipe does make a LOT of bean salad so beware. its absolutely delicious, especially the next day! ps-i used white onions and it came out great! i may try adding mango next time!

Grandma's Tomato Soup

Reviewed: May 26, 2009
great recipe and very flexible too! i used v8 and omitted the salt since it was already in the can, as well as the sugar. I added dry parsley and basil leaves, and ground black pepper because it was a bit bland before. I also added some chili powder to give it some heat. Another thing I did was add fresh tomatoes, and used half water and half milk to make it more rich..and it came out just wonderful.

Easy Strawberry Lemonade

Reviewed: May 26, 2009
great start. you can adjust the amount of lemonade to strawberry to your taste. i also used a fine strainer to remove small bits of strawberry, to get only a smooth lemonade. It worked great. I also served this in a punch bowl with thin slices of fresh strawberries floating on top. It looked beautiful! Thanks for a great recipe!

Curry-Coconut Shrimp

Reviewed: Jan. 20, 2009
I followed what the first reviewer suggested and it was great. I just added salt, and decreased the amount of coconut flakes at the end - using about 1/2 cup rather than 3/4 cup. Will definitely make it again. by the way, the cilantro looks and tastes great at the end so don't leave that out!!

Magic Cookie Bars II

Reviewed: Jan. 20, 2009
This was great. Like others, I made some changes according to what I had. I used semisweet chocolate chips, m&ms because I didn't have milk choco. chips (it added a nice fun color too!), and white choco. chips. I used some kind of cream instead of the condensed milk..I can't remember since I made it a few days ago, but the point is that you can make substitutions. The graham cracker layer was definitely a bit too thin so I would probably double that next time. Otherwise a deliciously, fatty recipe!!:) It tasted even better the next day!

Pistachio Eclair Dessert

Reviewed: Jan. 6, 2009
this is a pretty good dessert. i would suggest breaking the graham crackers into smaller pieces for a more bite size dessert. i also omitted the chocolate frosting, but rather but a bit of the pudding on top and garnished it with whipped cream from a can. i also put small chocolate chips on the sides (both white and milk chocolate). this added a nice touch. also, if you use whipped cream from a can in the pudding itself, it comes out just fine. just mix it up completely.

Cilantro Serrano Cream Sauce

Reviewed: Dec. 22, 2008
This was good, but not anything spectacular. I didn't have serrano chiles so I used regular chiles. I used half cream and half milk and it came out just fine. I mixed it up in some veggies and pasta. It's a great quick dish. I would recommend this recipe.

Awesome recipe! The only thing I did differently was add half water and half broth to lower the sodium and it still tasted great.
