Pasta with Fresh Tomatoes and Corn
I think this recipe originally appeared in Gourmet magazine, and for good reason. It's just delicious. So nice for summer, with fresh tomatoes and corn in abundance. Personally, i think the recipe as written makes too much of the "dressing" and leaves the vegetable and pasta mixture a bit oily. Next time, I might try adding some cooked cannellini beans to the mix, to get some protein in there. This one's a keeper.

Molasses Baked Chicken
This was just so-so. Definitely easy, and the chicken was moist, but the flavors weren't a hit with out family. Won't be repeated.

Burgundy Pork Tenderloin
So, so good! I will be making this once a week. Definitely pick up a cheap jug of burgundy to use. The resulting sauce/gravy is delicious! I did marinate the tenderloins in some EVOO with a ton of minced garlic before cooking, but other than that stuck to the recipe as written. Super easy dinner -- pair with some kind of potatoes and a green vegetable. Phenomenal!!!
