Easiest Focaccia Recipe

I was disappointed with the vagueness of this recipe. Not knowing just how moist the dough should be was confusing as to how much water to add. More or less olive oil and/or salt was also misleading. However, I guessed pretty close and added 2 very thin slices of red onion, 1 Roma tomato sliced thin and 15 black olives, again thinly sliced on top. Added 1 T. of olive oil and about 1 t. of Italian seasoning. Baked 15 minutes and achieved a reasonable success. Have made notes of the changes to make a good product.

Quick Yeast Rolls

Follow the recipe...do not add more flour. Follow the recipe! The description says "batter"...not dough. Fabulous results!!!

Herb Batter Bread

Only change I made was to use EVOO instead of shortening and margarine. Used a whisk instead of a blender. Good flavor but very mild. Next time will add oregano, garlic, marjoram, etc. to make it zing a little more. Served it toasted with butter and 4 men made short work of a loaf.

Rocco's Olive Bread

Overall pretty good. I used EVOO instead of butter and 1 teaspoon of granulated garlic, plus a little garlic powder and 1/2 teaspoon salt. Next time I'll use fresh chopped garlic. Made the old fashioned way by hand and it turned out looking very elegant.

Banana Nut Bread III

Asparagus Casserole II

Only used 2 cans of asparagus and a 1 1/2 qt. casserole dish. Otherwise did not change anything. Took to Dinner on the Grounds at church and everyone dug in. Next time I may add a little cayenne pepper and black pepper. Definitely will make again!!!

Tantalizing Turkey and Blue Cheese Meatballs

When I was the age of this genius I had no concept of cuisine! Wolfgang, Emerill, Bobby...watch out!\ These are fabulous. I subbed ground venison for the turkey and dropped the oil to 1 T. No problem with removing from foil. Hubby and I were extremely impressed with the results. Kudos!

Fish Fillets Italiano

All I had on hand is wahoo...which I don't care for, in fact, I'm not crazy about fish but had two for supper who were. I have to admit this is quite edible and my quests loved it. Served it over vermicelli and there were no leftovers! Good recipe, Bonnie!

Fresh Pear Pie

The only reason I'm giving it 5 stars is that I can't give it more! This is absolutely the best pie I've ever eaten! It's light and full of flavor and not really that fattening. I just wish my pear trees produced all year long!!!

Italian Dressing Mix

Yup...far too salty. Substitute one tablespoon garlic powder for garlic salt, delete the two tablespoons of salt completely and add the 1/8 teaspoon of citric acid one reviewer recommended and you have an absolutely perfect Italian Dressing, using only 1 1/2 T. of the mixture to the vinegar/oil/water base. Individuals can add salt at their discretion...but for those of us with high blood pressure...this would tip us over the edge. Above changes are still extremely tasty. Try on Pea Salad!

Crunchy Pea Salad

Was looking for a basic Pea Salad recipe I could tweak for hubby's and my diet. This one really stood out. Had to delete red pepper as I'm allergic, used Italian dressing instead of mayonnaise and deleted the poppy seeds as hubby is in construction and poppy seeds show up in drug tests as opium usage (I know...silly but true). This was absolutely delicious. Think I will throw in minced celery next time. Many kudos!!!

Mendi's Favorite Orzo

This really caught my eye...but of course I had to tweak a little. Instead of buttter I used evoo and toasted the orzo before adding the mushrooms. Used 1 cup of green peas as I don't care for corn. Hubby took one look at the dish and said "I'm not eating that!" Well...at the supper table when it was obvious how good it was he took a spoonful and declared "this is delicious!". Guess that says it all

Garlic Lover's Chicken

Garlic? One clove isn't even enough to bother a vampire...use several cloves. The flavor of the chicken and the moistness of the meat was great when I used 8 cloves of garlic...but it was soggy on the outside. Needs to toast under the broiler perhaps to finish.

Prime Rib

The secret is making Prime Rib for 2. Use the basics listed here on a four lb. roast...pop into a 450 degree oven, reduce heat to 350 and cook 20 minutes per pound. Let rest 15 minutes....Carve off the bone and make Prime Rib Soup with it.

Shrimp and Asparagus

OH YES!!! Had to reduce the butter way back and use a little olive oil (hubby and I both have serious health issues) and I used red/green/yellow Amish egg noodles. Added a little parsley for the color and it made a very festive Christmas eve dinner. Extremely tasty and a definite keeper!!!

Cornish Game Hens with Garlic and Rosemary

Have made this for years. Try cutting slits into the birds and inserting slices of garlic into them. Slice the lemons thinly and slide under the skin of the breast along with a few of the rosemary leaves. Will try the sauce next time...

Shrimp and Blue Cheese Dip

Didn't have sliced black olives so used chopped...end result was "tastes like heaven, looks like hell". Sliced olives are a definite for presentation! To help the appearance of my creation I added a rib of celery, diced very fine and some parsley flakes. This recipe is extremely tasty and I will make with the sliced olives next time and all the times afterwards. Thanks for sharing a great appetizer!!!!

Beer Dip I

Sorry...this was a major disappointment. It tasted like plain cream cheese and cheddar...the ranch dressing did not come through nor did any hint of the beer. I added chives, parsley and a few drops of hot sauce which improved it somewhat but will definitely not make this again.

Tomato Spinach and Basil Soup

Only change I made was to delete the sugar and it was totally awesome. The sugar probably wouldn't make a lot of difference...I just don't like sweet.
