I am a true Chocoholic. I love to bake, for some people it's stressful but once I tie on my apron and step into the kitchen, pick up my mixer and begin to bake, I'm in another place. A focused & quiet place.

My cooking tragedies
I can never forget, the time I made Corn Chowder for Thanksgiving. It was very runny and NO ONE would even go near it. I loved the recipe and thought it would be a nice deviation from the norm. Needless to say never attempted to make it again.

Whoopie Pies VIII
I bake for a living & these tasted pretty good! plenty of cocoa flavor. I sifted the cocoa, flour, etc before adding. I couldn't stop sampling the batter! It was sooo good. I followed a few tips from others reviewers. I added 1 cup brown sugar and 1 cup white sugar instead of the 2 cups of white sugar. I also prefer butter to shortening but, I appreciate the lift shortening brings. So, I added half butter and half shortening. I tried a greased pan but it resulted in flattened cakes. The pan used with parchment paper gave me thicker cakes that didn't spread much. I also felt that they were a bit dry when baked at 400 degrees for 8 minutes. But, I did use my small batter scooper(3/4 tblspn). I only baked two pans worth about 8 per pan. I'm thinking about adding a little espresso powder to the remaining batter. For the filling I used a marshmallow fluff recipe shared by one of the reviewers of the Oatmeal Whoopies. Once I put them together I froze them for about 20 minute to set.

Blonde Brownies I
I will have to retry this recipe, they stuck to the pan, it was just not thick enough for the recommended pan and a bit too sweet for me. I am a baker by trade but, we all have our bad days, so I will re-post after the next batch. They did taste just like choco chip cookies...yummy but sweet!

Bruschetta III
My family couldn't get enough of the them. It was my first time making them & it was a chore to chop up enough of the tomatoes, but, it was worth it! I made more the next day too. I did make a few adjustments, I used regular french bread, I used the tips posted from a few other Allrecipes cooks. Then, just fine tuned it to my tastes. I added more olive oil & a bit more cheese, I used garlic powder & minced garlic(as posted by another) I also toasted the bread after brushing it with the oil. Added more black pepper too. It is a really good recipe, thanks for sharing it Susan!
