Irish Boiled Dinner (Corned Beef)

I also use the spice packet or a combination of peppercorns, garlic and pickeling spices. My mother used to add an extra step; after the corn beef was done and cooled slightly she would brush one side with mustard, sprinkle on a little brown sugar and place under the broiler until the sugar melted and formed a thin glaze.

Dave's Big Raisin Cookies

My father made a similar cookie, he called them Yummy Raisin Cookies. He added a cup of chopped walnuts, used 1 teaspoon of salt and skipped chilling the dough.

Crazy Cake

My mother also made this cake when I was young. She called it 3 hole chocolate cake and used melted shortening instead of vegtable oil. This recipe is very easy to double or triple, always comes out great.

Apple Cake III

This recipe is very good as is; however, I did make 2 changes. I put half the batter in the pan then topped it with a peeled & chopped apple then spread the remaining batter on top. I also decreased the amount of brown sugar in the topping to 1/2 a cup.

Mini Cheesecakes

My Mother used to make these mini cheesecakes with one difference; she would drop a whole vanilla wafer in the bottom of the cup cake wrapper; instead of making a crust.
