Kidney Bean Salad

This was soooooooo good!! I'll use less mayo next time. I used green onions since I was out of regular onion. Very easy to make and super tasty. I didn't give it a chance to chill because it was just that good. Will make again and again.

Buffalo Style Chicken Pizza

I used about 1/3-1/2 cup of blue cheese dressing and a homemade, pre-baked crust, and skipped the butter. It was THE BEST Buffalo chicken pizza I ever had.

Italian Vegetable Soup

Zucchini Bread IV

My 9 year old made these with some help. They're PERFECT. We used 1 cup of chocolate chips instead of 1/2 c. walnuts and olive oil instead of vegetable oil.

Zucchini Pizza Bake

Made as per the recipe, this comes out super bland. I loved it, but had to add hot pepper flakes to suit my taste. I shredded the zucchini into my salad spinner, and then spun it a few times after 10 minutes. I also added a few tablespoons of pesto the second time I made it, it was delish.

Quinoa and Black Bean Chili

I LOVE this recipe! I found the chipolte peppers in the section with taco stuff. I made a few small changes to accommodate my personal preferences (no corn, olive oil instead of vegetable, red quinoa cooked in chicken broth, no cilantro). The heat of this dish is awesome, next time I might add another jalapeno. In my opinion, this needs at least 2 cups of water. Loved it and will definitely make it again.

Best Chocolate Chip Cookies

I made these a total of 3 times so far. They came out the best when I followed the directions. When I added cream of tarter as per another review, they cookies didn't hold their shape well. I didn't like them with the white chocolate chips from Aldi. I find that I have to cook them for 14 minutes, otherwise they're not done.

Italian Sausage Soup

I LOVED the soup, the flavor was unique and excellent. I made some modifications - I used water and beef base instead of canned beef broth. Dry (soaked and cooked) beans, and home made stewed tomatoes. It took much longer this way, but the result was well worth it.

Basic Pasta

Jamie's Minestrone

I love this recipe, I've been making this minestrone for years now. I do change it up a bit, like fresh green beans, dry, non canned kidney beans and more water or chicken broth. This is my favorite soup, I never get tired of it. Thank you Jamie!! You ROCK!

Chinese Restaurant Almond Cookies

The first time I made these, they were very tasteless. I used coconut oil in place of the lard. The second time I made them I used butter, and 3 tablespoons of almond extract. They were AWESOME the second time. Love them!!

Stuffed Shells I

This was excellent. I followed the recipe as is, and I'll make it again for sure. I have never liked stuffed shells because I hate ricotta, but this was awesome with the cottage cheese. Oh, I did use the small curd. Loved it.

Bread and Butter Pickles II

These bread and butter pickles are outstanding!! I halved the recipe and used only 2 cups of sugar instead of 2.5. Used ground cloves instead of whole and I also omitted the peppers. I'll definitely be making these again.

New York Italian Pizza Dough

I followed the recipe almost to the letter. I let the dough sit at room temp for only about 1/2 hour, which didn't bring it quite to room temp. My dough was wet and sticky, as the directions said it would be. It was never a "round ball" when I put it into the bowl, it was more like a wet blob, looked kind of like mashed potatoes. It grew too big for my large bowl and spilled out of the bowl in the fridge, but this was not a problem, it wiped off easily. The dough could not be rolled out with a roller because it was too sticky. I found steps 3 and 4 to be a little bit confusing - in 3, the rolling out of the dough on a floured surface and in 4 placing a pizza stone in the oven dusted with flour. (Was I supposed to preheat the stone and then transfer my dough onto the stone?) I stretched out the dough with my hands onto my floured pizza stone The taste was ok after I baked it an additional 2-3 minutes; before that, it tasted doughy. I will give it another try with the dough that's still in the fridge and cook 10 min @ 500. The crust was also thick, not thin, but I did have trouble stretching it out by hand w/o a roller. Another attempt from scratch - I added an additional 1/2-3/4 cup of flour. The dough was less of a mess than last time, but still too sticky to roll out with a rolling pin. The taste was so half. I prebaked the dough the second time. I really wanted to like this recipe, but won't be making it again.

Roasted Cauliflower Soup

USE LESS SALT!! I should have used only 1/2 t of salt instead of 11/2. Having said that, the soup was still awesome, even though it was a bit too salty for my taste. I didn't use sherry as I don't have any, and used olive oil instead of the garlic oil. This recipe is a definite keeper. I will be making again and again. My husband didn't like it at all, which is just as well, more for me!

Jay's Signature Pizza Crust

This pizza crust would probably be excellent if I had divided the dough and made two smaller pizzas, but I made one large pizza and it was WAY, WAY too doughy. If you follow the directions and bake at 425 for 20 minutes, the cheese would burn. I added my toppings when there were about 12 minutes left. Overall, it was pretty good, just too much "crust" for my taste. My family didn't like it either.

Chicken in a Pot

Whole family LOVED it!!! I doubled the broth, added a little more tomato paste and skipped the salt. I sprinkled some cayenne pepper on my plate, I didn't want to make it spicy because my daughter wouldn't eat it, but I loved the heat from the cayenne. My husband said he'd like shrimp in it next time. Great recipe, thank you Jo Ann!! Definitely a keeper.

Authentic Louisiana Red Beans and Rice

I loved this dish. Mine doesn't look like the one in the picture though. I hate the color of this dish, it looks grayish/brown and disgusting, but the flavor is great. The first time I cooked it, I followed the recipe to a T, and the dish looked even worse than the second time; the beans had fallen completely apart, and were mushy. I don't like super mushy beans, so the second time I made it, I cooked the beans for only an hour; this was much more to my liking. Love this dish!!
