Cinnamon Sugar Biscotti

**THANK YOU** Angela C. for the amazing suggestion of using this base recipe but omitting the cinnamon and adding white chocolate and craisins! I added 1 cup of craisins and 4 sq of chopped white chocolate and then sprinkled finely grated white chocolate and white sugar on top before the final bake. YUM YUM YUM!!!!

Potatoes Madras

This looks awful but tastes DIVINE! I omit the vinegar, serve the chutney as a side rather than cooked inside and I let it simmer for at least 40 minutes to keep the lentils soft.

Flourless Chocolate Cake I

Only ONE problem...I greased the pan very well but it still stuck to the bottom because it was so moist (which is of course better than burnt). Next time (and believe me, there WILL BE a next time!) I am going to either dust the pan with cocoa or use a lining. DELISH!

Breaded Chicken Fingers

Awesome! I used 1% instead of buttermilk and still turned out great! Only did one coat and they were perfectly breaded. Never had such great luck with crumbs sticking properly before! Totally PRO!

Don't be afraid! Biscotti seems daunting but it's not hard at all! Once you get through the first time, you'll be mixing and matching your own concoctions in no time!

Light Oat Bread

BEST bread I've ever made! I followed advice of other reviewers and made it on dough cycle in my machine and then baked at 350 for 30-35 minutes. After a few successful batches, I'm now going to try adding flax and some seeds. The only drawback I can see is that I think I ate half the first loaf by myself!!

Homemade Black Bean Veggie Burgers

Carnivore hubby actually admitted to loving a veggie burger! My only problem was that even with putting twice as much bread crumbs in, the burgers were still mush. That said, the sliders I cooked for the kids were done PERFECTLY so next time I'll just make sliders only and keep the cooking time the same.

Empanadas

I was short on time but couldn't find a reviewer who had attempted to make these without refrigerating the dough overnight. But I did it anyway and they turned out great! Here's how: After making the dough, wrap in plastic and chill in fridge for 30 minutes. Using a generous amount of flour on your surface, rolling pin and the dough itself, roll out gently -- being careful to always re-flour as it will get sticky if you don't (because you haven't chilled it overnight). I was also surprised at how much of the sugar/cinnamon mixture these absorbed after coming out of the oven looking a bit dry. No way! They were coated! I used Nutella for filling. Next time I'll use 5" circles because Nutella is so rich that this could have used a higher dough-to-filling ratio. :) SIMPLY YUM!

Zucchini Snack Bread

Wow! The density of this loaf makes it more like a bread, but the moist consistency and finger-licking sweetness make it a real treat. I used apple sauce instead of oil (helps with the moisture) and increased the shredded zucchini from 2 cups to 3 cups (hence, the density) and it was DELISH.

Chicken Piccata

Very yummy and the coating made it seem like there was a skin even though I was using skinless chicken. I added garlic powder and more wine, then used the leftover sauce to pan-fry steamed potatoes as a side dish.

Honey Mustard Dressing I
