Sundried Tomato Tapenade

Reviewed: Oct. 27, 2009
Simply delicious! So easy to make and when used as a bruschetta topper, this is a quick and impressive party dish! I used fresh basil and let sit for 6 hours before spooning on top of lightly oiled bruschetta pieces that then baked at 350 for 6 minutes. Even my 4-year-olds were raving!

Pork, Apple, and Ginger Stir-Fry with Hoisin Sauce

Reviewed: May 30, 2010
Pretty sweet but very yummy. Cut back brown sugar if you are using applesauce with any added sugar! Mix the sauce and then just put the pork in the sauce while the other stuff cooks. I used carrot (coins), celery (chopped) and didn't bother with the cornstarch coating on the pork. I was out of asian oils so used olive oil...it was fine but I think the peanut/sesame oils would be best.

Zucchini Snack Bread

Reviewed: May 28, 2010
Wow! The density of this loaf makes it more like a bread, but the moist consistency and finger-licking sweetness make it a real treat. I used apple sauce instead of oil (helps with the moisture) and increased the shredded zucchini from 2 cups to 3 cups (hence, the density) and it was DELISH.

Caramelized Red Bell Peppers and Onions

Reviewed: May 21, 2010
Added raisins and used white wine vinegar instead of red wine. Really great over chicken. Even went well with mexican chicken flauntas.

Clone of a Cinnabon

Reviewed: May 21, 2010
DELISH!!! I halved the brown sugar mixture because it was way too much/sweet the first time around. But leave the cream cheese topping as is, you need it ALL! Yum!

Chicken Piccata

Reviewed: May 19, 2010
Very yummy and the coating made it seem like there was a skin even though I was using skinless chicken. I added garlic powder and more wine, then used the leftover sauce to pan-fry steamed potatoes as a side dish.

Only took 1.5 hrs to make and chill. Cut back sugar by half a cup as it was too sweet.

Honey Mustard Dressing I

Great, as is! Maybe a teeny bit less soy sauce but the soy sauce is what gives this dressing a sweet kick.

Red Lentil Curry

Wow! This was so amazing and is certainly one of my favourite Indian dishes now. Used green curry paste and split the curry powder 2/3 hot and 1/3 mild.
