Pork, Apple, and Ginger Stir-Fry with Hoisin Sauce

Pretty sweet but very yummy. Cut back brown sugar if you are using applesauce with any added sugar! Mix the sauce and then just put the pork in the sauce while the other stuff cooks. I used carrot (coins), celery (chopped) and didn't bother with the cornstarch coating on the pork. I was out of asian oils so used olive oil...it was fine but I think the peanut/sesame oils would be best.

Zucchini Snack Bread

Wow! The density of this loaf makes it more like a bread, but the moist consistency and finger-licking sweetness make it a real treat. I used apple sauce instead of oil (helps with the moisture) and increased the shredded zucchini from 2 cups to 3 cups (hence, the density) and it was DELISH.

Emily's Famous Hash Browns

Did the recipe to a tee and they would not form into separate cakes (too runny). So I tried doing the entire pan (as also suggested in the recipe) and they just wouldn't cook up. I tried using less oil, still no go. Tried adding more flour to thicken it up and it just made it pastey and tasteless. Just couldn't save this one.

DELISH!!! I halved the brown sugar mixture because it was way too much/sweet the first time around. But leave the cream cheese topping as is, you need it ALL! Yum!

Korean Spicy Chicken Tenders with Sweet Apple

Didn't have Gochujang but substituted Sambal Oelek and it tasted great! Hubby thought it was delicious and I was impressed at how incredibly easy it was!

Chicken Piccata

Very yummy and the coating made it seem like there was a skin even though I was using skinless chicken. I added garlic powder and more wine, then used the leftover sauce to pan-fry steamed potatoes as a side dish.

Empanadas

I was short on time but couldn't find a reviewer who had attempted to make these without refrigerating the dough overnight. But I did it anyway and they turned out great! Here's how: After making the dough, wrap in plastic and chill in fridge for 30 minutes. Using a generous amount of flour on your surface, rolling pin and the dough itself, roll out gently -- being careful to always re-flour as it will get sticky if you don't (because you haven't chilled it overnight). I was also surprised at how much of the sugar/cinnamon mixture these absorbed after coming out of the oven looking a bit dry. No way! They were coated! I used Nutella for filling. Next time I'll use 5" circles because Nutella is so rich that this could have used a higher dough-to-filling ratio. :) SIMPLY YUM!
