Beef and Bean Chimichangas

I didn't use the taco sauce but instead, added taco seasoning to the beef/onions. Used organic canola spray instead of melted butter to save some serious calories!!

Crescent Beef Casserole

Bow Ties with Sausage, Tomatoes and Cream

Great! Used b/s chicken breast and boiled 1-to-1 honey/ketchup/soy sauce on the stove with a few cloves sliced garlic. Used ovenproof pot on the stove and just put the chicken right in there before transferring to the oven at 200 C for 35 min.

Potato Lasagna

Using what I had on hand, I ended up changing this entire recipe but for my own personal record, will comment and rate it. I used white potatoes, cut very thinly (mandolin size), sliced zucchini in place of the carrots, red pepper instead of the green, and a cheese fondue mixture (we live in Switzerland so American cheeses are hard to come by). I added a container of cottage cheese and used seasoned tomato puree instead of the vodka sauce. So really a completely different recipe but very tasty. It ended up like more of a Lasagna Stew which I thought was delish and so did the kids.

Honey Mustard Dressing I

Coconut-Curry Lentil Stew Served over Quinoa

Used stewed tomatoes and olive oil as substitutes. Added tomato sauce to cut down the sweetness of the coconut milk. Hubby loved it and it paired well with the quinoa...a nice change from the standard rice.
