Amish Breakfast Casserole

Reviewed: Feb. 5, 2010
This was wonderful. I added sliced mushrooms, halved grape tomatoes, and 3 extra eggs. Next time I will also add green pepper and brown the hash browns a little before mixing everything together. There was quite a bit of moisture right out of the oven but it was perfect when we reheated it the next day. The moisture could have been from my extra vegetables. This recipe is a keeper.

Quick Chicken with Asparagus and Provolone

Reviewed: Dec. 16, 2009
I just finished eating way too much of this. It's definately not the healthiest way to eat chicken and asparagus but it's delicious. I only made a few small changes. I used 1 cup chicken broth, fresh asparagus, and I added the provolone just a couple of minutes before it was done. I also used Panko instead of bread crumbs. I added 1/2 tsp Oregano, 1/2 tsp Basil, and 1/2 tsp garlic powder to season the panko but next time I think I will just season the chicken directly. Great recipe. Thanks.

Bella's Rosemary Red Potatoes - Crystalized

Reviewed: Dec. 15, 2009
These were great. I cut the recipe in half, used the same amount of rosemary, used olive oil instead of vegetable, and added one minced garlic clove. I baked them covered for 30 minutes and uncovered for 20 minutes. I will be making these often. I would have given 5 stars but I added more flaver to the recipe.

Rave Reviews Coconut Cake

Reviewed: Dec. 10, 2009
This cake turned out ok. I think the instant pudding mix gave it a weird artificial flavor. The icing was also very hard to mix up. I had to soften the cream cheese a few times in the microwave. I will keep looking for a Coconut Cake recipe.

Healthy Turkey Loaf

Reviewed: Dec. 10, 2009
I doubled all the ingredients including the egg. We like a lot of peppers and onions at our house so I doubled those again. Ended up with a cup of onion and a cup of green pepper instead of the red and yellow. This turkey loaf had a good flavor. It was a little bit crunbly but not so much that I won't make it again. Left out the lemon pepper. Baked at 350 for 1 hour in a 5x9 loaf pan. Very delicious considering how healthy it is.

Quick Brown Rice and Mushroom Pilaf

Reviewed: Dec. 10, 2009
This Pilaf was delicious. I hesitated about using the walnuts but they were great. Definatly try this recipe. I gave four stars because I used 2.5 cups cooked brown rice instead of the Minute Rice. I don't know how well it would have turned out as written. Great side dish. I am thinking about adding chicken to make it a one dish meal. Great way to eat brown rice.

Old Settlers' Baked Beans

Reviewed: Dec. 9, 2009
These beans had a great flavor. I used 1 lb. bacon instead of using the hamburger. The only problem I had was they seemed like they needed more cooking time. I will try about 2 hours in the oven next time.

Mexican-Style Taco Salad

Reviewed: Jul. 11, 2009
I would give this a 4.5 if I could. It was delicious. I love the use of actual spices instead of the all too common taco seasoning packet. I followed the recipe exactly except for leaving out the carrots. The only thing I will change next time is to use black beans instead of kidney,. This recipe is a keeper.

Heavenly Hot Dog Sauce

Reviewed: Jun. 16, 2008
This was delicious. I have made this twice. The last time I made it I used a total of 2 cups of tomato sauce. I left out the water and ketchup. It made it a little simpler and didn't really change the flavor. I also added 1/2 tbs Garlic Powder. My husband says it puts canned hot dog sauce to shame. Also, I freeze the leftovers. 1 cup of sauce is perfect for four hot dogs.

Chicken Chili Soup

Reviewed: Mar. 25, 2008
This recipe was incredible. I made it in the crock pot and used dried beans so it took me all day but it was delicious when it was finally done. I used half black and half red beans and added more corn. The spice combo in this recipe was perfect. This is my new favorite chili recipe.

Tammy's Favorite Lasagna

Reviewed: Dec. 17, 2007
This lasagna is wonderful. I followed the recipe exactly except I used half hamburger and half Italian sausage. I was able to make three 8x8 pans. one to cook and two for the freezer since I am only cooking for two. I had a little bit of white sauce left over so I spread it on top to keep my top layer of noodles from getting hard. Delicious. Thanks Tammy.

Basil Chicken over Angel Hair

Reviewed: Nov. 8, 2007
I thought this was wonderful. I doubled the tomato, garlic and onion. I used 1 tbs Dried Basil and it all worked out great. I think if I hadn't doubled the sauce it would have been really bland. This way it was perfect. Definitely try this if you like Italian dishes.

Chocolate Frosting III

Reviewed: Sep. 12, 2007
Very good. Easy and delicious. The only thing I did different was to use 4 tablespoons of heavy whipping cream instead of the 6 of milk. It had perfect spreading consistency. It also had a very rich chocolate flavor. I will definatly make again. Thanks for the great recipe.
