Spoiled Baby Back Ribs
These were great!! I did steam them in the oven (a little beer and water int he bottom of the pan - tightly covered with tinfoil) for about 2 hours. They were a little too fall of the bone...but very tender! The sauce is GREAT and broiling them to get that glaze was great. Hubby did not want to BBQ - watching the game!! It was an easy alternative. The only thing I changed in the sauce was less vinegar and added some cayenne pepper and hot sauce. Also - I doubled the sauce cuz we like them saucy!! This is definately a keeper.

Slow-Cooker Chicken Tortilla Soup
Wow - this was really great!! Hubby said it was the BEST he has ever had! As others had suggested - I just put a couple of frozen chicken breasts in the crock pot, used chicken broth in place of water, and added all the other ingredients. The black beans suggested are a MUST. I used medium heat enchilada sauce which was fine for hubby but a little spicy for me. I toned mine down with a tsp of sour cream...excellent addition. Served it with the homemade tortilla strips - which are definately a plus - so much corn flavor! Added some mexican shredded cheese. Can't wait to add some avocado to it at serving tomorrow! Excellent and easy.

Country Apple Dumplings
Amazing and easy. Made them sugar free with Splenda a little brown sugar and diet Mnt Dew. As others suggested I added some vanilla to the sugar mixture. Also used reduced fat crecent rolls. I will definately be making this over and over again.
