Southwest Breakfast Burritos

Very good for breakfast burritos with a southwest kick! I freeze these and my husband takes them to work. I have sour cream and salsa he can put in tupperware to take along with, depending on which one hes in the mood for. Thanks!

Paleo Chocolate Frosting

I think this is such a neat way to make frosting while using healthier fats. When I made the recipe as is, there was a bit of bitter aftertaste that was just too strong for our tastes (plus I was trying to get this by 12 seven year olds for a birthday party and it did not pass my son's initial taste test). SO I added some powdered sugar until the bitterness was covered and voila! The cupcakes with this frosting were the hit of the party (we also had regular cupcakes with buttercream frosting available). The extra powdered sugar does not make this frosting extra healthier by any means but it was definitely very good. Thanks for the recipe!

Chicken and Tortellini Stew

It was ok, kind of bland tasting for me when initially made. So I changed it up a bit-I used precooked chicken strips found in deli aisle (for nites when I REALLY need a quick meal), which saved me a step. I cooked the carrots in pan so I didn't have to boil as long, with onions and some spices (garlic pepper, basil, various ones from the cabinet I experimented with), then I boiled in chicken broth. Before carrots got too tender I added more frozen veggies (broccoli, corn), the chicken, and the tortellini. I added a bit more cornstarc/water mixture to make it a bit thicker. It helped, but I want to try to make more of a cream sauce with this recipe as the backbone next time.

Rhubarb Strawberry Jam

I decided to give this recipe a shot just because of the reviews-and I am SO glad I did. It is SO yummy! This is one of two things I have made during my marriage where my husband has said, "this is good, you definitely need to make more of this." I must always have a jar on hand now. I recommend to anyone who is shy with rhubarb to give it a shot-I am SO glad I did.

Chocolate Velvet Ice Cream

I think this is a good starting point, but I havent found a way to 'perfect' it just yet. Made just as, it was just too sweet to me, and I've got a sweet tooth. I've made it a few more times doing different things-less cocoa, more salt, etc etc...and still not there. Until another reviewer can find the thing that tops this recipe off, I might have to venture off with my search for the ultimate homemade chocolate ice cream. Thanks though, sooo close!

Slow Cooker Beef Stew I

DEFINITELY much better than just using McCormick's packet alone! My husband thought it was too strong though, and I can agree, so next time the ONLY thing I'll change is just adding about an extra cup of water to the mixture...which could only better the recipe by making extra gravy :-).

Broccoli Casserole

I made this for Thanksgiving and everyone loved it. The only thing I did different was the cracker topping, mostly in response to another review saying their turnout was soggy. To prevent that I used almost one whole Ritz cracker tube, crushed, over the top. The dish turned out excellent, I will definitely do this again.

Blueberry Zucchini Bread

I had fresh blueberries to use, so I gave this recipe a shot-AMAZING. Dont even taste the zucchini, what a healthy way to keep this moist! I make this in muffin pans and throw a couple in ziploc bags and throw them in the freezer for breakfast or snacks on the go-just pop them in the microwave and they are yummy and warm all over again. I used the recipe again with frozen blueberries, and it tasted amazing even still. Good to know i can make this all winter long. This is something I have to have in the freezer at all times! -I also tried this recipe but added chocolate syrup, melted chocolate (unsweetened and bittersweet) and some mini chocolate chips-it was great! But i definitely think we love this with berries the best. Thanks for a great recipe!

Iced Pumpkin Cookies

HOLY COW these are AMAZING. Probably the best and most moist cookie Ive ever made. Next time I'll prob add more of the spices for a bit more punch, or try some chocolate chips, but leaving it just as it is with the icing is superb.

Basic Chicken Salad

Great basic recipe. I add a bit of onion and a bit more celery, a tad of mustard and some garlic powder. I ate it with the Amish White Bread (from this site) and the bit of sweetness in the bread tasted AMAZING with this recipe.

Sauteed Apples

I've tried to make fried apples for my husband who grew up loving his aunts recipe...yet my prior attempts were not so great. I tried this recipe this morning, and my picky husband loved them! Next time Im going to try them for dessert with a little whipped topping...that seems like it would be just delicious.

Absolute Best Pancake Syrup

Very tastey...I didnt have buttermilk so I tried to make some with milk (skim was all I had) and 1TB cream of tarter. I tried to follow other reviews in trying to make the syrup thicker...letting it cool, adding corn starch...but it was still really runny. I guess Ill just have to keep making this to perfect that! That was my only real complaint.

The best french toast Ive had...but I mistakingly made a 4-serving meal and there was definitely was not enough of the egg-mixture. So next time I will double it. But the recipe itself...I wouldn't change a thing!

Chicken Fried Chicken

This is an awesome recipe, next time Im going to go along with another review and make the chicken thinner prior to cooking so it cooks quicker and more thoroughly. Also in the breading mix I used Ritz crackers and some crumbled chips (this time I used BBQ flavor) along with some McCormick chicken seasoning, and garlic pepper, and it tasted soooo good.

Zucchini Herb Casserole

I think zucchini is my new favorite vegetable! I was a little apprehensive about this recipe, only because I love love love meat and was afraid this recipe wouldn't be enough without it-WRONG! This dish was amazing. I also doubled the seasonings, but that was it. So yummy, I could easily eat this a few times a week. Thanks!

Broccoli Chicken Casserole I

I think this is a great little meal. Cooked up some chicken tenderloins in a skillet with chicken broth and some seasoning, cooked the stuffing, and like other ratings suggested I just mixed it all with the soup (I used one can cream of chicken and one can cream of broccoli). I nixed the mayo, and was (OOOPS) out of milk, so I added a little chicken broth and water to thin the mixture up. I added some basil, onion powder, garlic sat, and italian seasoning, and loaded with cheddar cheese. Baked until bubbly..and parfait! Excellent, tastes wonderful. With the modifications this is a GREAT recipe, thanks!

Lemon Cream Pasta with Chicken

This was excellent. I had to alter some things with what I had on hand-but this recipe led to an awesome dinner. I had some precooked chicken strips on hand I wanted to cook, so I let those simmer in chicken broth and lemon juice with garlic pepper and green pepper and onions in a sauce pan while I cooked the noodles as described in the recipe. I didnt have cream so I added skim milk (all I had) and butter to the noodle mixture instead. It still thickened up, and let me tell you, this was excellent. And because the chicken was precooked, this dinner only took me as long to cook as the noodles did. I did alter this recipe-but only because I was looking for a recipe where I could use the little I had on hand-and this did the trick. I highly recommend it, and cant wait to taste it with cream!

Sweet Dinner Rolls

I LOVE this recipe. However I started making these roles about an hour before dinner so I didn't let them rise as long as they should. I initially let them rise for about 30 mins, punched a hole in the middle, divided into 8 big rolls, let those rise for about 20 mins...and baked at 350 for about 10 mins. PARFAIT. Its comforting to know I dont need to let them rise for as long and they will still turn out great.
