Brooke's Best Bombshell Brownies

Made mine with no butter! Just substituted with half organic vanilla milk, half applesauce, and added walnuts and a little extra chocolate chips. DELICIOUS AND A HALF and no butter??!?!? Dream come true.

Homemade Black Bean Veggie Burgers

Loved this recipe! It's cheaper and fresher than the frozen kind, and even though mine crumbled, I poured the large crumbles into a wrap and added other veggies, homemade guacamole, and a little hummus and cheese. Also, I made this with chopped mushroom, fresh chili peppers and fresh garlic chives. I'm looking to substitute the bread crumbs with whole wheat crackers that I crumble next time, and rinse/drain beans before mashing to decrease crumbling. Loved it and will definitely make it again!

Zucchini Spice Cake

This recipe made the cake just so moist and wonderful, but I think the changes I made to it gave it an extra zing. PLEASE try these additions - it makes it healthier/tastier! I doubled the amount of cloves, used only 1 and 1/2 cup of brown sugar, used oat flour (ground 1 and 1/2c rolled oats), added 1/2 cup of walnut pieces, added 1/2 cup of craisins, added 1 medium apple, cut into small cubes, and added orange zest (grated the entire surface of 1 medium orange). WHAT a win.

Blueberry Nut Oat Bran Muffins

I ended up using this recipe so many times, using the base ingredients as the base of my recipe and switching up which fruit I added in. My favorite was adding craisins and walnuts (and I want to try orange zest with that next time!) and dicing up canned peaches or pears (or even fresh pears or apples) and baking those in too.

Apple Spice Cake

This cake was DELICIOUS and moist and just wonderful! I even substituted ingredients to make it healthier and the spices just gave it this great kick and it still tasted so so so good! Maybe next time I'll try adding some lemon or orange zest.

Amazing Whole Wheat Pizza Crust

I didn't reeeeally like this too much, mostly because it kind of lacked in taste... It might taste better if you spread it out thinner in the pan and drizzle extra olive oil in the pan before putting the crust in the pan. But it did get the job done

Banana-Zucchini Bread

I only made half a batch but I still used 3 bananas (I didn't have any zucchini on hand) so to kind of compensate, I chopped a Fuji apple into pretty small cubes and threw that in. Yes, it didn't taste like banana/zucchini bread anymore, but it tasted almost like a great apple pie in bread form somehow! It was great! There was too much sugar in this recipe... I read the previous reviews and only used the brown sugar and no white sugar and there was still too much. I would still use less. I didn't have craisins, so I added some raisins instead, and threw in some extra cinnamon and a little nutmeg just for flavor. Substituted applesauce for the oil and added in some extra to increase the liquid content, and also added about 2 tbsp of flaxseed as suggested in a previous comment. To make the flour component healthier, I used the spice grinder (cleaned out first) to grind up the appropriate amount of old-fashioned rolled oats into whole grain oat flour. It only took a few minutes, and didn't give the cake/bread the odd taste that whole wheat flour can give it.

Vegan Curried Rice

I'm going to add corn and green peas and maybe diced carrot when I make it, this sounds delicious! I can't find any boullion cubes in the grocery store though, and I don't ever really like the flavor of vegetable broth that can be bought in those cans so I'm still looking for an alternative plan since I can't use chicken (I'm vegetarian) Any suggestions?

Classic Bran Muffins

My low rating was due to dryness and kind of bland flavor. I did however substitute 1/2 of the flour for more bran, and maybe since i only had oat bran on hand, it may have been more absorbant than wheat bran would have been. I already added an extra egg and some extra applesauce for moisture but it still wasn't as moist as I would have liked the muffins to be. Next timE I will make it with 2 eggs, extra buttermilk and extra applesaure instead of 1/3 cup oil, more sugar and add in a tsp of cinnamon. I may also add a pureed banana or pumpkin to give it more moisture and flavor.

Libby's® Pumpkin Cranberry Bread

This recipe was absolutely FABULOUS - it is still moist even the day after and tastes great! I used some of the suggestions from other reviewers and added 2 tsp of cinnamon, switched half the oil for 1/2 cup of applesauce, and switched the white sugar for brown sugar. I also added about 1 cup of craisins and 1/2 cup of chopped walnuts. For extra moisture and taste, I chopped two small asian pears into small pieces and folded them in as well, which was a fantastic addition! I happened to find oat bran (sold in bulk) at the store and switched 1 cup of that for one of the cups of flour. It gave the bread a heartier feel and flavor. I baked for just under an hour, maybe 50 min. or so and the texture was perfect! I will definitely make this again! Also, regarding the price of pumpkin pie spice, it can be expensive if you buy the kind sold in a spice container, but it is almost 1/5 of the price if you buy it in the little plastic bags by weight which some grocery stores have available. See if they have that at the spice aisle at your store!

i also substituted pineapple for the coconut because i'm not a huge fan of coconut and it turned out delicious! It's kind of dense, but still very moist, so everyone ended up having smaller portions too

Holly's Hummus

I didn't have olives on hand, so I added a littttttle extra chick peas and used 5 cloves of garlic because someone reviewed that hummus is all about garlic :) Next time I think I will just use 4 cloves because it was a little bit too strong. I also didn't have cilantro, so I just added an extra sprinkle of basil. This was GREAT! If you like it a little creamier, add an extra drizzle of olive oil and lemon juice.

Simple Spinach Lasagna

My family really enjoyed this! And they're pretty picky. I added a few extra vegetables that added some taste too, such as broccoli and green pepper. I also added a few more herbs and spices to my liking. This recipe is really moldable, so you can adjust it to your needs. I also used less cheese, and it still tasted great!

Fresh Tomato Salsa

This is a great recipe! It tasted really fresh and tangy and best of all, it was so simple to make! We ran out of tomatoes, so we used just one tomato and one green pepper instead of 3 tomatoes, and used an old blender that kind of turned everything into pulp instead of neatly chopping it, and it STILL tasted really good!

Bread Machine Focaccia

Amazing recipe! I made it in the bread machine, and it was great! I even substituted rosemary for 1/4 tsp of dried parsley, the kind that comes in the shaker, and the fresh garlic for 1/4 tsp of garlic powder, and it came out really well!
