Vegan Pancakes

WWII Oatmeal Molasses Cookies

I don't know, these were ok. chewy and soft, but not very oatmeal-y, and kind of bland I thought. I used butter instead of shortening and I added raisins and walnuts and chocolate chips, eh.

Downeast Maine Pumpkin Bread

This was my very first attempt at making cheesecake, it turned out perfect! Followed the recipe exactly, didn't have a pan big enough for my pie plate to fit in so I just put a pan full of hot water in the oven with the cheesecake. I was a little discouraged that my cake had become lopsided while baking but I left it in the oven to cool as directed and everything settled itself out! A perfect cheesecake!

Iced Pumpkin Cookies

Simply scrumptious! I've made this cookie two years in a row now and have already had requests to make them again this year. If you don't mind cakey-cookies, give this recipe a try. The icing looks/tastes great as well.
