Restaurant Style Egg Drop Soup

Brazilian White Rice

I have been making rice this way since I lived in Brazil in 1993. I love it, my kids love it and my Peruvian husband loves it. We eat it several times a month. Sometimes I leave out the onion and use only garlic.

Cashew Chicken with Water Chestnuts

Yucca Frita

I make fried Yucca all the time for my family. I would suggest some changes to this recipe. You need to first boil the yucca until tender. I have never timed how long it takes, 20-30 minutes depending on how thick the Yucca is. I always buy it frozen since it bruises easily and hard to buy fresh. Salt the water. Then fry until golden brown. I serve this with rice and beans or dip in Peruvian Green Aji sauce. Yummy!

Penne with Garlicky Broccolini

I used wheat Penne and turkey bacon to make this a little lighter. I did end up adding a little of olive oil to saute the garlic since the turkey bacon left very little oil in the pan.

Applesauce Brownies I

My kids couldn't get enough of these. I added half chocolate chips and 1/2 cup peanut butter chips to the top,because that is what I had on hand. There were cake like brownies.

White Cheese Chicken Lasagna

This is an extremely rich recipe. For my Hispanic family it lacked a little salt. For a family of picky hate veggie kids the spinich wasn't a big hit. For me I think I would have added a little salt and a little garlic to the spinich to give it more flavor. Will make again but not any time too soon. Very rich.

Broccoli with Garlic Butter and Cashews

I will try this again since so many gave it a good review. I found the sauce too thin. Next time, I will use a little cornstarch as suggested. I used a mixture of frozen broccoli and cauliflower I will try this again since so many people gave it a good review.
