Cheese's Baked Macaroni and Cheese

Just what I needed for supper tonight! We're huge cheese lovers, so I used about 16 oz of shredded cheddar & jack cheeses. Also, for the bread crumbs, I always make my own by lightly toasting a few slices of bread and buttering them on both sides, before crumbling atop the macaroni. Some other users might want to try that, if they don't like the dry bread crumbs. Additionally, this can be made with whole wheat flour, instead of white flour, if desired. We tried it that way and it still tasted great.

Appetizer Meatballs

I had to substitute an 8oz can of tomato sauce because I didn't have enough ketchup. Tasted good, but a little too sweet, so I added about 1 Tbsp of soy sauce... also left out the water since I was making it in the crockpot. Nice change from traditional bottled barbecue sauce!

Farmer's Market Vegetarian Quesadillas

Great idea and quite versatile!! I have made these several times now, always with a different list of veggies, depending on what I have in my fridge (carrots or corn make a great addition). I also add seasonings like basil, garlic or ginger, chili powder... and last time I sauteed it with some worcestershire sauce as well as the olive oil. Came out really tasty! Another modification was to add mayo or ranch dressing to the tortilla along with the veggies and cheese. Thanks for sharing your creativity!

Corn-Stuffed Tomatoes

Great idea! We got a ton of tomatoes from a relative and I was looking for something creative to do with them... I baked them in ramekins instead of a muffin pan so they could just be left in there; it's a good thing because they ended up with a lot of extra liquid and filling! Overall they were pretty tasty, though next time I may add a few more seasonings or maybe some cheddar cheese after they're done.

Steamed Radishes

Had some radishes to use up and no salad greens, so I gave this one a try. Turned out okay - I kind of liked them, but my husband didn't think they had enough flavor. If I try these again I will probably season them or mix with other vegetables.

Sophie's Zucchini Bread

This was my first attempt at zucchini bread, and I was pleased with the results. Because I was using only what I had on hand, I substituted 2 cups of summer squash for the zucchini - but it still came out tasting great! I did take someone else's suggestion and only bake for 53 minutes... next time I'll shorten it by a few more minutes, as it came it out a little dryer than I like. But overall I am pleased with the result... and so is my hubby! :)

Pork Chops and Sauerkraut

This was my first time trying sauerkraut, and I thoroughly enjoyed it! I actually used applesauce instead of juice, and I put it all in my slow-cooker for about 5 hours on high. It came out deliciously tender and moist, and my husband and I both want to have it again!

Slow-Cooker Chicken Tortilla Soup

Absolutely delicious! Made this for a church fellowship and had lots of people asking for the recipe. Only problem was the tortillas got soggy real quickly. Next time I might just serve it with tortilla chips.

Rocky Road Candies

Easy, quick, and delicious. Used less marshmallows and left out the nuts (allergies), but it came out great. Next time I would make it in a smaller pan, so the bars can be a little thicker.

Ground Beef N Rice Pie

Probably not going to make this one again. The texture of the meat mixture was like uncooked beef, and while my husband liked it, I could barely get down one serving. I think if I made this again, I would brown the meat first, before adding the sauce & other ingredients. I did make one change, using italian dressing instead of tomato sauce with the rice, just for variety, and that turned out quite tasty.

Soft Chocolate Chip Cookies II

Wow. These are amazing!! Definitely need to watch the oven and take them out before they start to turn dark - in my oven they only needed about 6-7 minutes. Only problem is that it made at least 5 dozen, which is way more than we need for only 2 of us!! Guess we'll have to make excuses to eat more cookies...

Zucchini Pasta II

Great blend of flavors, especially with the red pepper! Added summer squash. Didn't have any cream cheese on hand, and it turned out fine without it. However, we liked it enough to try it again with the cream cheese. Definitely sprinkle parmesan on top - it completes the meal!

Shepherd's Pie Daddy's Way

Good basic recipe that got tweaked just a bit. Didn't have any golden cream of mushroom, so we used regular. Added onions after browning the meat. Layered a can of green beans on top of meat, then potatoes, then shredded cheddar (instead of American). Sprinkled chives across the top. Tasted great and was easy to put together.

Slow Cooker Spare Ribs

Great flavor. My husband doesn't like soy sauce, so I substituted 1 tbsp mustard & 1 tbsp honey for the soy sauce. Turned out delicious!! Will definitely be making this one again.
