Apple Pecan Cobbler

Wow! This was a great dessert. I used 4 apples and layer them twice with the cinnamon mixture, then put the cobbler and pecans on top. Took longer to bake, maybe cause my pan was deeper.

Louisiana Sweet Potato Pancakes

I think these are fantastic! I used 2 cups mashed sweet potatoes and they were the perfect consistency. You have to cook them longer at a low temp or they don't seem done in the middle.

Caribbean Sweet Potato Salad

This is a refreshing salad. I didn't have only half the lime juice, but it turned out okay. Be careful not to overcook the potatoes and definitily put in fridge overnight. Hard to measure potato size so just add potatoes to taste. You don't want them too dry.

Roasted Vegetable Lasagna

This is my husband's new vegetarian favorite. Used feta instead of Ricotta and dry basil instead of fresh. I think it could use a bit more tomato sauce, but that's my only suggestion.

Zesty Beef Roast

Excellent! Very easy to make and the rave about the gravy is right on. Fast and simple. I made roasted veggies on the side in Balsamic vinegar, lemon juice, thyme, rosemary, salt & pepper. Nice meal.

Waffles I

I always double this recipe and then freeze the waffles for toasting later. After seeing a recipe for Gingerbread waffles on this site- I add some cinnamon, nutmeg, ginger and allspice which takes this recipe to a whole new level!

Pumpkin Pie I

Big hit. My guests all had seconds and said with real pumpkin they could never go back to canned. I used extra spices, as suggested, but I think I overdid the ginger or something for my own tastes. No one else noticed.

Granny Kat's Pumpkin Roll

Great recipe, wonderful taste. Don't worry about the pan. If you flour and grease well it just pops out. Next time though I will use a bigger pan. My 9x13 made it too thick to really roll beautifully. If it were a bigger spread and the cream could be spread thinner it would have spiraled better. Oh well, tastes the same!

Very easy to make and fast! Doesn't need to simmer as long as suggested. Followed the recipe exactly, except I only used two chicken breasts and that worked very well.

Vegetarian Phad Thai

This is one of my favorite recipes. I have made it several times at the request of friends. Go easy on the cayenne, most people don't like it. Also, use 1/3 less peanut butter than suggested or it will be too overbearing. I always end up putting in a little extra water so it doesn't get too thick and clumpy and alot of extra lime juice. I didn't have peanut oil so I used half veg. half sesame oil. Only used 1 c. brown sugar.

The sauce on this was very bland. I even tried adding some lemon juice, but it just didn't ever turn into something great. I will go back to using more mainline Hollindaise sauces.
