Banana-Zucchini Bread

Wow! I unfortunately didn't have cranberries or walnuts on hand, but I used this recipe to make muffins and they are soooo good! I made a few changes, used 1 cup of light brown sugar and no white sugar, used 3 bananas and more zucchini. I wish I had apple sauce at home instead of the oil to make things a bit healthier, but these muffins are delish! Thanks for the great base recipe! Oh also, I made large muffins, and cooked them at 350 for about 35 mins.

Chocolate Chocolate Chip Nut Muffins

This recipe sounded so yummy, I decided to try to make a healthier version and hope for the best. I used 1 cup of all purpose flour, 1/2 cup whole wheat, and 1/2 cup wheat germ. I also cut the sugar down to just over 1 cup, and used a single serving cup of unsweetened apple sauce instead of the oil. I followed another reviewers suggestion and used 1 1/2 cups of milk and 1/2 tsp salt, and added more walnuts and only 1/2 cup of chocolate chips. I didn't think they needed the sugar on top. Honestly, for all the changes, these muffins are awesome! I filled the cups right to the top and got nice big rounded tops, the recipe made 15 good sized muffins. So yummy and chocolatey, and still not TOO guilty.

Chewy Chocolate Chip Oatmeal Cookies

These turned out well, but didn't spread out nearly as much as I'd hoped. They taste great though, and to appease my cookie-monster husband I eliminated the nuts and doubled the chocolate chips. I also increased the vanilla to 1 1/2 tbsps, but I always do that with chocolate chip cookies, we love vanilla!

Pecan Pie Muffins

These are yummy little muffins! I made a few small changes - once my butter was melted I realized that there was a bit extra, about 3/4 C, so I added a little more flour to compensate. I also reduced the sugar to 3/4 C, and baked mine for 20 mins. The recipe made 12 nice, small little muffins that are perfect with tea in the morning! I sprayed my tins with regular cooking spray and added a little flour, they didn't stick at all.

Crispy Fish Fillets

I used this recipe as a base, since I didn't want to fry the fish. I also added a couple of other things - minced garlic to the eggs, and lightly floured the fillets before dredging, then breaded with panko flakes and grated parmesan. I cooked them in the oven at 375 for about 15 minutes, they stayed nice and light and moist, really good! I liked the flavor of the mustard with the fish. Great recipe.

The Best Banana Bread

I wanted to make a healthy snack for my 18 month old son, so I used only 1/2 cup of brown sugar to sweeten the bread, and replaced 1 cup of the flour with 1/2 cup of wheat germ and 1/2 cup of Salba, which is made from a ground seed and is a whole food. I threw in 1 tsp of pure vanilla extract, some walnuts that I had in the pantry and a handful of chocolate chips for good measure, and he loves it! Really yummy, and healthy too!

Banana Peanut Butter Bread

I wanted to make a healthy banana bread for my toddler, so I made a few substitutions, and it turned out awesome! First I used 1 C flour, and 1 C wheat germ, and I sweetened it with about 1/3 C brown sugar and 1/4 C brown rice syrup, which also helped to make for a moist bread. I also upped the peanut butter, (I used natural p.b), to 3/4 C like other reviewers suggested. Delicious!

Old Fashioned Fudge Cookies

i thought that these cookies were really great, they disappeared pretty quick. i didn't have enough flour, so i substituted the last 1/2 cup with cocoa powder, and, contrary to a lot of other reviews, i didn't find them dry at all.
